We deliver success in our customer focused business functions of Front of House, Ticketing, Marketing, Food & Beverage, Strategic Communications, Car Park, Retail and Guided Tours. We are the largest team in the organisation with over 450 people. The Customer Service team is responsible for consistent and outstanding service across all customer touchpoints. The Role Effectively leads their team and manages the day to day operations of bars at the Sidney Myer Music Bowl, to create an iconic venue for Victorians. The role develops and implement strategies to increase revenue and improve the customer experience, The role will strategically align the Food & Beverage department through adopting the organisations core values by working together with courage and conviction for Arts Centre Melbourne. Being Inclusive – you act in a way that is inclusive and provides an environment of access and equity Your qualifications and experience Degree or Certificate 4 or relevant hospitality background (experience in performing arts not required) Management (or senior supervisory) experience with medium to large teams and/or in a large venue Current RSA Certificate Experience in event management (large events up to 12500 people) Ability to deliver a high level of customer service with a pro-active approach to problem solving. Proven hospitality management experience Proven experience in effectively leading the performance of a team in a fast service bar environment. Sound knowledge of food handling standards and OHS compliance Strong organisational skills to coordinate internal and external resources and activities Experience in POS system, preferably Square and InfoGEN Experience in all liquor license requirements Experience using an integrated Events Management System Demonstrate initiative and ability to work autonomously and as part of as team. In the role you will Accountabilities: Oversee and coordinate all food and beverage operations at the Sidney Myer Music Bowl. Manage contracted F&B labour supplier and teams on shift. Develop and implement strategies (including market segmentation) to increase revenue, improve the customer experience and maintain and raise the venue’s profile. Conduct pre and post show event checks, recommending most appropriate rectification works when required. Rostering of all F&B events staff & maintain effective staffing levels throughout the Sidney Myer Music Bowl bars. Together with the procurement team place beverage orders for each show & ensure stock levels are maintained and orders are adjusted accordingly; Maintain team morale Staff issues are handled in a timely manner and in accordance with Arts Centre Melbourne guidelines; Actively suggest improvements to further support success of business unit goals and operations; Play an active role in team meetings and organisational forums/initiatives; In collaboration with the Operations Manager, Food & Beverage, identify opportunities in value add services to increase revenue; Contribute to the development of reports that are accurate, timely and audit compliant; Maintain cleaning schedules and standards in accordance with the Arts Centre’s guidelines; Identify risks in the workplace and implement reporting procedures with a focus towards OHS improvements in safer work practice; Promote a safe, healthy and secure work environment; Contribute to the improvement of safety performance at Arts Centre Melbourne; Comply with all policies, procedures and guidelines introduced by Arts Centre Melbourne in the interest of health and safety; Ensure food is stored appropriately and food safety logs are up to date; Ensure staff are trained in food safety policies and procedures; RSA is monitored in accordance with training received and local guidelines ; Food and beverage handling is in accordance to food safety policies and procedures; Maintain food safety policies and procedures Together with the Operations Manager, Food & Beverage, Manage and oversee all liquor licensing requirements for each event Reports on any risks identified within the activities of the position. If the position is assigned responsibility for managing risks, that those risks are managed in accordance with the Arts Centre’s Enterprise Risk Management Framework. On event days’ work alongside core Sidney Myer Music Bowl roles and project team in making sure the event is a success Post show reporting submitted no later than 5 days after the event Conduct post show briefings with contracted labour hire representative, financial partner, procurement, Sidney Myer Music Bowl management and operations management. Stock Management – Manage all stock that goes in and out of the venue and account and report for any variances to the Manager, Procurement. Manage food trucks and make sure that they are compliant with current COM legislation. Food truck offerings are where possible in line with the audience for the event and has a good variety on offer. This role is primarily focused on the Sidney Myer Music Bowl but will be required to work in other F&B outlets across ACM from time to time and on relevant project work outside of the Sidney Myer Music Bowl season. This role reports to Operations Manager, Food & Beverage but is accountable to senior roles within a core project team with members from outside the Business Unit. Decision making: Under the broad direction of both the Operations Manager. Food & Beverage and the Manager,– Sidney Myer Music Bowl, the incumbent will be required to make decisions on day to day operations and challenges from the rest of the business and escalate issues appropriate team member with the ACM team. The incumbent will be required to balance the often competing enquiries and immediate demands of internal and external stake holders. The role represents the interests of Arts Centre Melbourne in managing relationships with food & beverage and presenters. A moderate/high level of delegation and operating autonomy is required, and the ability to take tactical decisions within the scope of the assignment. Systems: EBMS,Etivity, EATEC,POS, Microsoft Suite Working environment/physical requirements: Work at the Sidney Myer Music Bowl (outdoor venue) and other food & beverage outlets. Be required to undertake the tasks and requirements detailed in the relevant job task analysis. Undertake general office work with a strong emphasis on the use of computers and digital technology. Potentially work in an underground office environment. Be required to be on site/attend events outside work hours from time to time.
