But a friend I run with every week was raving about a cook- book called Run Fast, Eat Slow. I ended up getting it - the kicker was the fantastic muffins he made from it that were gluten free, had two cups of shredded carrots and zucchini, and just ½ cup of maple syrup to sweet- en them. Somehow, they managed to be really, really good and not seem like they were trying too hard to be healthy, despite their ingredient list sounding like they might be too earnest to be truly enjoyable. And so I got the cookbook, and started making some different things for dinner – like sweet potato-salmon cakes, and a millet based pizza crust with pesto on it. Cooking, for me, tends to mean I make the same thing, over and over again, for no real reason, and stop thinking so much about what I’m eating beyond mak- ing sure that I ate close to enough for the running I did that day, or to fuel my body for the next day’s run (or so that I don’t wake up starving at 3am).
