Japanese Food and Culture Syllabus Instructor: Class hours: Objects: Students will learn about Japanese food culture with aspects of geography, history, and anthropology. Students will also learn basic spoken Japanese (greetings, numbers, time, self-introduction, ordering food and paying at restaurant, asking direction, etc). Textbook: No textbook required. Instructor provides handouts. Material fee: Students have to pay for transportation and food they eat (about $10) at field trips. Grading: • Attendance and participation 10% • 2 Japanese food culture presentations 30% (15% each) • 5 field trip reports (Shofuso tea ceremony, Maido, Maru Global, Yokohama Ramen Boy and Yakitori Boy Japas) 20% (4% each) • 2 oral exams 20% (10% each) • 2 written exams 20% (10% each) Week 1 Orientation Japanese drills: • Japanese syllables and essential knowledge about Japanese • Greetings • Numbers • Time Lecture: • Five senses of taste in Japanese cuisine. • Geography and food Short film showing Week 2 Lecture: • Edo government and macrobiotic • Annual events and food Japanese drills: • “…desu” sentences • self-introduction Week 3 Drills review Presentation: Tea ceremony 1.
