Japanese Food and Culture Syllabus Instructor: Class hours: Objects: Students will learn about Japanese food culture with aspects of geography, history, and anthropology. Students will also learn basic spoken Japanese (greetings, numbers, time, self-introduction, ordering food and paying at restaurant, asking direction, etc). Textbook: No textbook required. Instructor provides handouts. Material fee: Students have to pay for transportation and food they eat (about $10) at field trips. Grading: • Attendance and participation 10% • 2 Japanese food culture presentations 30% (15% each) • 5 field trip reports (Shofuso tea ceremony, Maido, Maru Global, Yokohama Ramen Boy and Yakitori Boy Japas) 20% (4% each) • 2 oral exams 20% (10% each) • 2 written exams 20% (10% each) Week 1 Orientation Japanese drills: • Japanese syllables and essential knowledge about Japanese • Greetings • Numbers • Time Lecture: • Five senses of taste in Japanese cuisine. • Geography and food Short film showing Week 2 Lecture: • Edo government and macrobiotic • Annual events and food Japanese drills: • “…desu” sentences • self-introduction Week 3 Drills review Presentation: Tea ceremony 1. Tea and sweets 2. Kaiseki 3. Tea room and the ceremony 4. History of chopstick 5: Table manner 6: Okonomiyaki and Takoyaki 7. Yoshoku (Japanese style Western food) 8. First food industry Week 4 Field trip to Maido Week 5 Spoken Japanese review Written Exam 1 Oral Exam 1 Maido report due Week 6 Field trip to Maru Week 7 Lecture: Sakoku and after Sakoku Japanese drills: • Kore/sore/are/dore • Koko/soko/asoko/doko • “arimasu” sentences • Ordering food • Asking prices Maru report due Week 8 Drills review Presentations: 9: Soba, Udon, Somen and Hiyamugi 10: Ramen 11: Instant noodles 12: Kobe beef, Shabu Shabu, Sukiyaki and Gyudon 13: Sushi in Japan 14: Sushi in the USA 15: Yakitori and Izakaya culture 16: Onigiri and convenience stores Week 9 Field trip to Ramen Boy and Yakitori Boy Week 10 Onigiri making Spoken Japanese review Written Exam 2 Oral Exam 2 Ramen Boy, Yakitori Boy, Shofuso tea ceremony reports due Presentations: • Students will give two presentations about Japanese food culture using Power Point and handouts. • Each presentation will be about 15 minutes. • Students must e-mail their Power Point file of the first presentation by Monday 9am of the 3rd week, and the second presentation by Monday 9am of the 8th week. .
