Described by Tatler as serving “cleverly conceived new cocktails”, the bar is split into two areas: the main bar and the outer terrace bar. The walls in the main bar area are adorned with artwork and books synonymous with the Bloomsbury Set, with a subtle English colonial influence. Named by The Spirits Business as “one of the hottest bar openings of 2016” it has a traditional member’s club feel, allowing guests to relax and enjoy their evening in style. The secluded outside bar resembles a relaxed bohemian space with heated booths lining the exposed brickwork and a canvas of fairy lights covering the ceiling Dingle Distillery Notes To The Editor: The Dingle Distillery is the brainchild of cousins, Oliver Hughes & Liam LaHart, the men behind Ireland’s first craft brewery, The Porterhouse Brewing Company. Having successfully pioneered the Irish craft beer revolution, the cousins turned to artisan spirits, and together with Peter Mosley, founded Dingle Distillery - Ireland's first purpose built distillery to open in over 150 years. The Dingle Distillery takes the best Irish malted barley to make pure pot still single malt whiskey. It is then put it in casks to let the mild, moist, unique Dingle air do the rest. No whiskey in Scotland or Ireland experiences a maturation process like this. But Whiskey takes a total of three years and one day to mature before it can legally be called whiskey. And so, during the maturation process, they began the artisanal distillation of its Dingle Original Gin and Dingle Pot Still Vodka. .
