Wine has been judged at the Perth Royal Show since 1843 and the competition is regarded as critical to the success of establishing a national and even international reputation for the WA wine industry. The scholarship will provide financial assistance for up to two years to a student undertaking tertiary study in a wine related discipline to help support their career in the wine industry. Please note applicants must have already successfully completed at least one year of the relevant course. The Advanced Wine Assessment Course (AWAC) is an intensive four-day course designed for participants with considerable formal wine tasting experience. It aims to prepare potential new wine show judges and develop the sensory analysis capabilities and the vocabulary of Australian wine industry personnel at an elite level. As the dust settles after a huge year of celebrating the best in food and wine, we take a moment to chat with Millbrook Winery’s head chef and 2017 The West Australian Good Food Guide Chef of the Year Guy Jeffreys about his approach to cooking, produce selection and wine. 7 2018 PERTH ROYAL WINE AWARDS RESULTS CATALOGUE FOOD AND WINE The kitchen garden at Millbrook is central to the experience, what does it mean to you growing, preparing and serving ingredients you’ve produced yourself? Everything, it’s a lifestyle. We have 1 acre of heirloom vegetable garden, 2 acres of 90 year old orchard, and an acre of olive grove. We haven’t bought any fruit or vegetables for the restaurant in the last couple of years. The chefs do all the gardening. 100% is grown from seed and about 60% is grown from the previous seasons saved seeds. We don’t use chemicals or sprays and it’s all done by hand. What are your favourite vegetables to grow and cook with in the restaurant? Whatever is in season, and whatever we pick that morning! We grow about 100 different varieties of vegetables over the year so it’s a bit like picking a favourite child. But, I would say tomatoes in Tell us a bit about yourself! Below is a list of what we pull out of our garden on a spring day Serves 4 as a quick, tasty treat INGREDIENTS 4 x 200g fish portions 4 knobs butter 8 kale leaves 8 silverbeet leaves 8 asparagus spears A large handful of podded broadbeans 4 small fennel bulbs, fronds reserved for garnish 1 kg mussels, bearded 1 chilli, sliced 3 garlic cloves, sliced 1 lemon, juiced Salt, pepper and olive oil METHOD Season the fish, place a knob of butter on top of each portion and bake in the oven. Grab a large heavy based pot and place all ingredients in apart from the fennel fronds and lemon juice, put on a tight fitting lid and place on a high flame. As soon as it starts to steam take off the heat and stir through the lemon juice.
