Chapter12 Aperitifs and Cordials Alcohol is the anesthesia by which we endure the operation of life. —George Bernard Shaw Absinthe French 1 1 sugar cube Fill an old-fashioned glass ⁄2 full 1 2 ⁄2 oz. pastis with crushed ice. Drop in sugar 1 lemon twist cube, and slowly pour pastis over sugar until it’s almost dissolved. Garnish with lemon twist. Addison Cocktail 1 1 1 ⁄2 oz. sweet vermouth Fill a cocktail shaker ⁄2 full with 1 oz. gin ice. Pour in sweet vermouth and 1 orange twist gin. Give it a good stir, and strain into a cocktail glass. Garnish with orange twist. Alabama Slammer Cocktail 1 1 1 ⁄2 oz. Southern Comfort Fill a cocktail shaker ⁄2 full with 1 oz. amaretto ice. Pour in Southern Comfort, 1 oz. sloe gin amaretto, sloe gin, orange juice, 2 oz. orange juice and lemon juice. Give it a good 1 TB. lemon juice shake, and strain into a highball 1 glass ⁄2 full of ice. 272 Part 2: The Recipes Allies Cocktail 1 1 oz. dry vermouth Fill a cocktail shaker ⁄2 full with ice. 1 oz. gin Pour in dry vermouth, gin, and kum- 1 tsp. kummel mel. Give it a good stir, and strain into a cocktail glass. Amaretto Sour 1 2 oz. amaretto Fill a cocktail shaker ⁄2 full with ice. 3 ⁄4 oz. lemon juice Pour in amaretto, lemon juice, and 1 oz. simple syrup simple syrup. Give it a good shake, 1 maraschino cherry and strain into a sour glass full of ice. 1 orange slice Garnish with maraschino cherry and orange slice. Amer Picon Cocktail 1 2 oz. Amer Picon Fill a cocktail shaker ⁄2 full with ice. 1 ⁄4 oz. grenadine Pour in Amer Picon, grenadine, and 1 oz. lemon juice lemon juice. Give it a good shake, and strain into a cocktail glass. Liquor Lingo Amer Picon is a bitter French cordial made of cinchona bark, orange, and gentian created by Gaetan Picon in 1837. It is also referred to as simply Picon. Amer Picon Cooler 1 1 tsp. superfine sugar Fill a cocktail shaker ⁄2 full with ice. 2 oz. Amer Picon Add superfine sugar and then pour 1 oz. gin in Amer Picon, gin, and lemon juice. 1 ⁄2 oz. lemon juice Give it a good shake, and strain into a 1 highball glass ⁄2 full of ice. Americano 1 oz. sweet vermouth Fill an old-fashioned glass with ice. 1 oz. Campari Pour in sweet vermouth, Campari, 2 oz. club soda and club soda. Give it a good stir, and 1 lemon twist garnish with lemon twist. Chapter 12: Aperitifs and Cordials 273 Amour Cocktail 1 1 1 ⁄2 oz. dry vermouth Fill a cocktail shaker ⁄2 full with ice. 1 1 ⁄2 oz. sherry Pour in dry vermouth and sherry, and 1 dash bitters add bitters. Give it a good stir, and 1 lemon twist strain into a cocktail glass. Garnish with lemon twist. Apocalypse 1 oz. peppermint schnapps Pour peppermint schnapps, Southern 1 oz. Southern Comfort Comfort, and hot chocolate into an 4 oz. hot chocolate Irish coffee glass. Give it a good stir. Apple Rouge 1 2 oz. Dubonnet Blanc Fill a cocktail shaker ⁄2 full with ice. 1 oz. applejack brandy Pour in Dubonnet Blanc and applejack 1 lemon twist brandy. Give it a good shake, and strain into a cocktail glass. Garnish with lemon twist. Argentina Cocktail 1 1 1 ⁄2 oz. dry vermouth Fill a cocktail shaker ⁄2 full with ice. 1 1 ⁄2 oz. gin Pour in dry vermouth, gin, Benedic- 1 ⁄4 oz. Benedictine tine, and triple sec, and add orange 1 ⁄4 oz. triple sec bitters. Give it a good stir, and strain 1 dash orange bitters into a cocktail glass. Artist’s Cocktail 1 1 1 ⁄2 oz. sherry Fill a cocktail shaker ⁄2 full with ice. 1 oz. bourbon Pour in sherry, bourbon, grenadine, 1 ⁄4 oz. grenadine and lemon juice. Give it a good shake, 1 ⁄2 oz. lemon juice and strain into a cocktail glass. B-52 1 1 oz. coffee liqueur Fill a cocktail shaker ⁄2 full with ice. 1 oz. Irish cream Pour in coffee liqueur, Irish cream, 1 oz. Grand Marnier and Grand Marnier. Give it a good shake, and strain into an old-fashioned glass full of ice. 274 Part 2: The Recipes Bahia Cocktail 1 1 1 ⁄4 oz. dry vermouth Fill a cocktail shaker ⁄2 full with ice. 1 1 ⁄4 oz. sherry Pour in dry vermouth, sherry, and 1 ⁄4 oz. pastis pastis, and add bitters. Give it a good 1 dash bitters stir, and strain into a cocktail glass. 1 lemon twist Garnish with lemon twist. Banshee 1 1 oz. crème de bananes Fill a cocktail shaker ⁄2 full with ice. 1 oz. white crème de cacao Pour in crème de bananes, white 1 oz. light cream crème de cacao, and light cream. Give it a good shake, and strain into a cock- tail glass. Beirut Breeze This original cocktail comes from the lovely Lebanese eatery Mandaloun in West Hollywood and is a particularly pretty drink. 4 oz. cranberry juice Fill a Collins glass with ice. Pour in 1 ⁄2 tsp. Pernod bitters cranberry juice and then Pernod bit- 2 oz. Arak ters. Top with Arak, and garnish with 1 mint sprig mint sprig. Liquor Lingo Arak is a Lebanese anise-flavored (and very potent) spirit. It’s some- times called “the milk of lions” because it turns from crystal clear to milky white when ice is added. Here it turns a creamy shade of pink when it hits the cranberry juice. Big Red 1 1 1 ⁄2 oz. sweet vermouth Fill a cocktail shaker ⁄2 full with ice. 1 oz. dry vermouth Pour in sweet vermouth, dry ver- 3 ⁄4 oz. sloe gin mouth, and sloe gin, and add orange 2 dashes orange bitters bitters. Give it a good shake, and 1 orange slice strain into an old-fashioned glass full of ice. Garnish with orange slice. Chapter 12: Aperitifs and Cordials 275 Bittersweet Cocktail 1 1 1 ⁄2 oz. dry vermouth Fill a cocktail shaker ⁄2 full with ice. 1 1 ⁄2 oz. sweet vermouth Pour in dry vermouth, sweet ver- 2 dashes orange bitters mouth, and add orange bitters and bit- 1 dash bitters ters. Give it a good stir, and strain into 1 orange twist a cocktail glass. Garnish with orange twist. Blackthorn 1 2 oz. sloe gin Fill a cocktail shaker ⁄2 full with ice. 1 oz. sweet vermouth Pour in sloe gin and sweet vermouth, 1 dash orange bitters and add orange bitters and Angostura 1 dash Angostura bitters bitters. Give it a good stir, and strain 1 lemon twist into a cocktail glass. Garnish with lemon twist. Boccie Ball 1 2 oz. amaretto Fill a highball glass ⁄2 full with ice. 3 oz. orange juice Pour in amaretto, orange juice, and 1 oz. club soda club soda. Give it a good stir. Bonsoni Cocktail 1 1 2 ⁄2 oz. sweet vermouth Fill a cocktail shaker ⁄2 full with ice. 3 ⁄4 oz. Fernet Branca Pour in sweet vermouth and Fernet 1 lemon twist Branca. Give it a good stir, and strain into a cocktail glass. Garnish with lemon twist. Liquor Lingo Fernet Branca is an Italian bitter-sweet digestif. Boyd of the Loch 1 2 oz. dry vermouth Fill a cocktail shaker ⁄2 full with ice. 1 1 ⁄2 oz. Scotch whisky Pour in dry vermouth and Scotch 1 lemon twist whisky. Give it a good stir, and strain into a cocktail glass. Garnish with lemon twist. 276 Part 2: The Recipes Bresnan 1 2 oz. sweet vermouth Fill a cocktail shaker ⁄2 full with ice. 1 1 ⁄2 oz. dry vermouth Pour in sweet vermouth, dry ver- 1 TB. crème de cassis mouth, crème de cassis, and lemon 1 ⁄2 oz. lemon juice juice. Give it a good shake, and strain 1 lemon twist into a cocktail glass. Garnish with lemon twist. Burn’s Special 1 2 oz. sweet vermouth Fill a cocktail shaker ⁄2 full with ice. 1 1 ⁄2 oz. Scotch whisky Pour in vermouth, Scotch whisky, and 1 tsp. Benedictine Benedictine. Give it a good stir, and 1 lemon twist strain into a cocktail glass. Garnish with lemon twist. Charleston 3 1 ⁄4 oz. dry vermouth Fill a cocktail shaker ⁄2 full with ice. 3 ⁄4 oz. sweet vermouth Pour in dry vermouth, sweet ver- 1 ⁄2 oz. gin mouth, gin, kirschwasser, orange 1 ⁄2 oz. kirschwasser curaçao, and maraschino liqueur. Give 1 it a good stir, and strain into a cocktail ⁄4 oz. orange curaçao 1 glass. Garnish with maraschino cherry. ⁄4 oz. maraschino liqueur 1 maraschino cherry Chelsea 1 1 1 ⁄2 oz. dry vermouth Fill a cocktail shaker ⁄2 full with ice. 1 oz. bourbon Pour in dry vermouth, bourbon, black- 2 tsp. blackberry brandy berry brandy, triple sec, and lemon 1 tsp. triple sec juice. Give it a good shake, and strain 1 TB. lemon juice into a cocktail glass. Garnish with lemon twist. 1 lemon twist Cherry Cocktail 1 1 1 ⁄2 oz. cherry Heering Fill a cocktail shaker ⁄2 full with ice. 1 oz. dry vermouth Pour in cherry Heering and dry ver- mouth. Give it a good stir, and strain into a cocktail glass.
