Healthy Chocolate Banana Bread If you are a fan of chocolate banana bread then this healthy chocolate banana bread is going to blow you away. Banana bread is one of my all time favorite baked goods, so this recipe has literally made my dreams come true. A healthy chocolate banana bread recipe that you can eat on the regular with zero regret. If you’ve ever seen the movie Matilda then you are no doubt familiar with the scene of Bruce eating the “infamous chocolate cake”. Most people that I have talked with are absolutely repulsed by this scene, as he helplessly stuffs the cake into his mouth. Not my sister and I. In fact every time we watched it, we craved a gooey chocolate cake so badly. Now whenever we see a chocolate cake that looks incredible we reference the “Matilda cake”. Something is clearly wrong with us, we’re fully aware LOL. There is just something about the moist, gooey appearance of that cake that gets me.You can say it’s been a life dream of mine to create what I would think would be a healthy version of this cake, and you guys I’ve finally done it. I’ve created a healthy matilda cake, but in bread form! All jokes aside this healthy chocolate banana bread is what dreams are made of. It literally melts in your mouth. The hardest part about making this recipe is that you need to make this bread a day in advance, or at least wait a good 4-5 hours before eating the bread. If you can wait a full night that is preferable. Waiting a full day is crucial and will give you that desired softness. It’s not the same eating it right away I promise you. The texture and taste improve substantially. I know it’s hard but it will be worth it! Do it for Bruce. Recipe 1 cup All Purpose Flour or Oat Flour 1/3 cup unsweetened cocoa powder (Hershey’s special dark) ½ tsp baking soda ½ tsp salt 1/3 cup baking stevia 3 bananas 2/3 cup almond milk 1/3 cup almond butter or peanut butter. (I prefer a crunchy peanut butter because it gives the bread a nutty texture.) 2 tsp vanilla extract 2 tbsp sugar free Hershey’s chocolate syrup ½ cup dark chocolate chips Directions 1. Spray * 5 X 9* loaf pan and preheat oven to 350 F 2. Mash bananas and then add in liquid ingredients and combine. 3. In a separate bowl combine all dry ingredients and mix thoroughly. Then combine both dry and liquid ingredients and mix until combined. 4. Pour into loaf pan and add extra chocolate chips on top if desired. 5. Bake in center of rack for about 23-25 minutes. Length will depend on your oven so it may vary a little. Bread should be slightly under cooked. Stick a tooth pick in the center to check, should not come out clean, but should be firm enough to where it does not jiggle. 6. Next let cake sit in the fridge overnight or for at least 5 hours. This is crucial so you can get that desired soft and moist texture from the bread. Pro Tip: To brown unripe bananas place bananas in the oven on a pan at 350 F for 5-7 minutes.
