Ingredients Materials ● 2 eggs ● Mixing bowl ● 3/4 Lb all purpose flour ● Hands or spatula (340 g) ● Pot or pan ● 2 oz caster sugar (55 g) ● Stove ● 2 oz unsalted butter (55 g) ● Plastic wrap ● 1 organic lemon ● Paper towels ● 1 organic orange ● Serving tray or bowl ● 3 tbsp candied fruit ● 2 tbsp sugar decorations or sprinkles ● 2 drops Rum or Brandy (not necessary) ● 1 drop Anise flavor ● 1 pinch table salt ● Sesame oil How to Make Struffoli Steps 1. This is a family tradition that has been passed down from generation to generation. I hope you enjoy the treat! 2. Let the butter soften 30 minutes into the oven turned off with the light on, then cut it into pieces and stir with a fork until smooth and inflated. 3. After that, grate the lemon and orange to obtain zests. 4. Now, crack the eggs and pour them into a bowl along with the sugar, the softened butter, the lemon and orange zests, 2 drops of Rum or Brandy, 1 drop of Anise flavor, and 1 pinch of salt. 5. Finally, whisk until consistent. 6. Add the flour, a little at a time into the butter and eggs mixture. 7. Pouring the flour, pinch the dough with your fingers until the liquid will be absorbed by the flour, creating a sort of pastry crumbs. 8. Now, compact and stretch out the crumbs until obtaining a consistent dough. 9. Eventually, wrap the dough and store into the lower part of the fridge at least 2 hours. 10. Take a fistful of dough and roll it into a log 1/2 inch thick. 11. Now, reduce the log into pieces 1/2 inch long. After that, pour the sesame oil into a pot and place over medium heat until reach 356° F (180° C). 12. Eventually, fry the Struffoli a little at a time until golden, then place on paper towels to dry the oil in excess. 13. Pour the honey into a nonstick pan, big enough to contain Struffoli. 14. Place the pan over low heat and stir until fluid. 15. Finally, place the pan far from the heat and add Struffoli and sweet decorations. 16. Materials Ingredients ● Mixing bowl ● 2 cups of fresh grated ● Spatula coconut ● Hand or Spoon ● 2 cups of jaggery ● Stove (unrefined sugar) ● Griddle ● 1 tbsp of poppy seeds ● Mixer/Blender ● 1 tbsp of split roasted ● Rolling pin and chana dal Board ● 4 green cardamom pods ● Mixing Spoon ● 1 cup of all purpose flour ● 1 cup of fine sooji (creamed wheat) ● 1 tsp of turmeric powder ● 2 tbsps of sesame oil ● Ghee (clarified butter) ● 1 pinch of salt #1 - How to make coconut jaggery stuffed flatbread (kayi obbattu) steps Coconut Jaggery stuffed Flatbread (kayi obbattu) is a traditional sweet made during festivals and enjoyed by the family. The recipe has been passed on from generations by our ancestors. We come from a region where a lot of sugarcane plants, coconut trees grow. (Jaggery is unrefined sugar extracted from the sugarcane). That explains why they made this sweet. 1. First, take a mixing bowl and add all purpose flour and fine sooji and 1 tsp of turmeric powder and a pinch of salt. 2. Next, mix them up by adding water little by little and make a soft dough. 3. Then, add 1 tb of oil and knead the dough, add the remaining oil on top of the mixture cover it and keep it aside for 30 mins. 4. Next,switch on the stove and place a thick bottom pan and add 2 cups of crushed/powdered jaggery and quarter cup of water to it and bring it to boil. 5. Then, when the jaggery is completely dissolved, add the 2 cups of fresh grated coconut and mix it well. 6. Next, cook this mixture on a medium flame until all the moisture from the coconut evaporates. 7. Use a blender and make a powder of poppy seeds, roasted split chana dal and peeled cardamom seeds, add this powder on top of the sweet mixture,mix it thoroughly and switch off the stove. 8. Now let the mixture cool down completely, the mixture thickens as it cools. 9. Next, smear your hands with some ghee and make small lemon sized balls from the cooled coconut jaggery mixture and keep them aside. 10. Then, make small balls out of the all purpose flour mixture as well. 11. Next, spread the all purpose flour mixture in your hands and place the coconut jaggery ball in the middle and cover it from all sides to from a stuffed ball. 12. Then, use a rolling pin and a board, dust the board with the flour and roll this stuffed ball into a flat bread. 13. Next, place a griddle on the stove and let it get heated, place this flat bread on hot griddle, flip it after a minute and cook it on both sides, smear some ghee on either sides while cooking. 14. Finally, repeat the above steps for the remaining mixture and our Coconut Jaggery Stuffed Flatbreads (Kayi Obbattus) are ready!!! 15. Gulab Jamun is Indian sweet made during special occasion and festival time. 2. First take a bowl and put instant mix pack size 3.5oz Gulab Jamun. 3. Add (50ml milk into Gulab Jamun mix it together and make a dough. 4. Apply a small amount of ghee to your palms and prepare round balls. 5. To prepare sugar syrup take 300ml of water and set stove on medium heat. 6. Take 1 cup(300g) sugar and add into boiling water. 7. Boil the water until 5 minutes and add cardamom and saffron into the sugar syrup. 8. In frying pan add about 4 tablespoon of Ghee and set on stove on low heat. 9. Place round balls into frying pan, fry it until become golden brown. 10. Soak balls (Jamuns) in hot sugar syrup for 30 to 35 minutes. 11. Once it cool down little bit it ready to serve. Materials Ingredients ● Bowl ● 3 cups rice ● Dosa pan ● 1 cup urad dhal ● Ladle ● 1 teaspoon ● Plate fenugreek seeds ● 3 cups water ● 1 teaspoon salt ● 1 teaspoon oil # 3 - Steps How to make an egg dosa 1. Add 3 cups of rice, 1 cup of urad dhal and a teaspoon of fenugreek seed in a large bowl. 2. Rinse them and soak about 5 to 6 hours. 3. Drain the water and transfer everything to a speed blender. 4. Add 3 cups of water,a tablespoon of salt and start grinding to make the batter to a pan cake batter consistency. 5. Ferment the batter until it gets double in size. 6. Mix the batter with a ladle. 7. Heat a dosa pan, grease it and pour a ladle of batter on the pan and spread it to make a round shape. 8. Break an egg and pour it on the batter. 9. Take a big wide pan and place it on the stove. Pour the oil in the pan and heat oil on medium flame. 2. Add mustard seeds and wait until the seeds POP! 3. Now it’s time to add peanuts! Please do not burn the peanuts. Be very careful. (This is optional. If you are allergic you can skip this step.) 4. Add the daliya, garlic, curry leaves, hing, chilli powder, and turmeric powder. Fry for a few minutes. 5. Finally, add the puffed rice and salt. Mix ingredients together until the puffed rice is well coated with the spices. 6. Time to Eat! Mouthwatering Masala Puffed rice. It is crispy,puffy and soft. 1. First take one cup of wheat flour in a mixing bowl. Add ½ teaspoon of salt to the flour and mix. 2. Then add little water at a time and knead the dough into a soft and stiff consistency. 3. Cover the dough and rest it for 15 mins. 4. Now take the dough and make 10 equal portions and make smooth round balls.
