'Simple' Beef Stroganoff Yield: serves 4 Ingredients: 1 lb Top Sirloin Steak (can substitute Beef Tenderloin, Tri Tip, or Top Round Steak) 2 Cups Homemade Cream of Mushroom Soup 1 Medium Yellow Onion - thin sliced ½ Cup Sour Cream + more for garnish 2 Tbs Extra Virgin Olive Oil Kosher Salt to taste Fresh Ground Black Pepper to taste Fresh Parsley - chopped for garnish -OPTIONAL- 1 clove Fresh Garlic - minced ½ tsp Smoked Paprika 1 tsp Worcestershire Sauce 1 tsp Tomato Paste Preparation: 1) Cut the beef into thin strips (apx ¼ inch wide) - Season strips with salt and pepper to taste and toss with 1 Tbs olive oil - Set aside 2) Heat a large skillet over medium-high heat - Once the pan is hot, add the beef and stir fry until browned on all sides - Remove beef from pan and set aside 3) Reduce heat to medium and add the remaining olive oil to the pan - (IF USING: Add garlic and sauté for 1 minute) Add onion and sauté until tender and golden in color 4) Add the cream of mushroom soup to the pan and bring to a simmer 5) IF USING: Add Worcestershire Sauce and/or tomato paste and thoroughly combine 6) Return beef to pan and continue to cook until warmed through 7) Remove from heat and fold in the sour cream until well incorporated 8) Adjust seasoning - Serve over wide egg noodles and garnish with a dollop of sour cream, chopped parsley, and a sprinkle of fresh ground black pepper Taz Doolittle www.TazCooks.com .
