Draft for Board Approval July, 2011 LCISD Curriculum Lifetime Nutrition and Wellness Suggested Time STUDENT OBJECTIVES Ranges One-Half Credit First/Fourth Six Weeks Course Introduction and Orientation 2 Days LNW 1(A) The student will classify nutrients, their functions, and food 4 Days sources and compare the nutritive value of various foods. LNW 1(B) The student will assess the effects of nutritional intake on 4 Days health, appearance, effective job performance, and personal life. LNW 1(C) The student will analyze and apply various dietary 5 Days guidelines throughout the life cycle, including pregnancy, infancy, childhood, and late adulthood. LNW 1(D) The student will compare personal food intake to 3 Days recommended dietary guidelines. LNW 2(A) The student will describe the processes of digestion and 4 Days metabolism. LNW 2(B) The student will calculate and explain basal and activity 2 Days metabolisms and factors that affect each. LNW 2(C) The student will apply knowledge of digestion and 2 Days metabolism when making decisions related to food intake and physical fitness. LNW 2(D) The student will locate community resources that promote 2 Days physical activity and fitness. LNW 2(E) The student will explain the relationship of activity levels 2 Days and caloric intake to health and wellness, including weight management. Second/Fifth Six Weeks LNW 3(A) The student will research the long-term effects of food 5 Days choices. LNW 3(B) The student will outline strategies for prevention, treatment, 3 Days and management of diet-related diseases such as diabetes, hypertension, childhood obesity, anorexia, and bulimia. LNW 3(C) The student will determine the effects of food allergies and 2 Days intolerances on individual and family health. LNW 3(D) The student will plan diets based on life cycle, activity 3 Days level, nutritional needs, portion control, and food budget. LNW 3(E) The student will develop examples of therapeutic diets. 2 Days LNW 3 (F) The student will analyze advertising claims and fad diets 2 Days with the recommendations of the Recommended Dietary Allowances. LNW 3(G) The student will analyze current lifestyle habits that may 2 Days increase health risks. LNW 3(J) The student will read and interpret food labels. 1 Day LNW 3(K) The student will examine and explain nutritional serving 1 Day sizes. LNW 4(A) The student will demonstrate safe and sanitary practices in 2 Days the use, care, and storage of food and equipment. LNW 4(B) The student will explain types and prevention of food-borne 2 Days illnesses. LNW 4(C) The student will practice appropriate dress and personal 2 Days hygiene in food preparation. Third/Six Six Weeks LNW 5(A) The student will read and comprehend standard recipes. 2 Days LNW 5(B) The student will correctly use standard measuring 2 Days techniques and equipment. LNW 5(C) The student will demonstrate correct food preparation 3 Days techniques, including nutrient retention. LNW 5(D) The student will use food buying strategies such as 4 Days calculating food costs, planning food budgets, and creating grocery lists. LNW 5(E) The student will demonstrate food preparation techniques to 3 Days reduce overall fat and calories. LNW 5(F) The student will practice etiquette, food presentation, and 2 Days table service appropriate for specific situations. LNW 5(G) The student will apply food storage principles. 2 Days LNW 6(A) The student will participate as an effective team member 2 Days demonstrating cooperation and responsibility. LNW 6(B) The student will apply effective practices for managing time 2 Days and energy to complete tasks on time. LNW 6(C) The student will practice problem solving using leadership 2 Days and teamwork skills.
