A D D T O C A R T White Wine Sustainable, Vegan-Friendly, Volcanic Floral & Mineral Off-Dry Light Bodied Juan Jesús, who is a 4th generation winemaker, 750ml founded Viñátigo in 1990 and has worked 12% alc./vol tirelessly since then identifying, recuperating the native grapes of the Canary Islands. Ungrafted Malvasia Aromatica from small parcels in the northwest of Tenerife below 200 meters. These plots enjoy mild weather and a heavy oceanic influence. By stopping the fermentation when there is still a bit of residual sugar, Viñátigo makes this beautiful and aromatic off-dry wine. On the nose, it has beautiful aromas of grapefruit and citrus, fresh salty peaches, bitter orange peel and rose petal notes. On the palate, the vibrant acidity cuts through the subtle sweet sensation. This is one of the best aperitivo wines we have ever tasted. The small amount of residual sugar makes it extremely crushable. It is also beautiful / when paired with grilled fish, tartare and ceviches; as well as with spicy Asian cuisine. During the thirty years that he's overseen Bodegas Viñátigo, he has considerably increased its holdings, planting varieties that he and his team recuperated from near extinction. Driven by passion and love for his homeland, Juan decided to revive and work to save all the native grape varieties that were brought to the Canary Islands by the conquers back in the 15th century and that had survived on the islands for centuries. However, these grapes were about to disappear. Viticulture was being abandoned in the archipelago and international varieties were being planted to appeal to the international market, that was until Viñátigo rescued them.
