Coming from Burgundy, it easily adapts to the Aosta Valley, where it is quite successful despite its frailty. From the vineyards situated at a low altitude and from a selection of the best clones, originates the Pinot Noir vinified into the more traditional red wine. Label Vinification/Ageing Valle d’Aosta DOC Pinot Noir Pre-fermentative cold maceration for 24 hours. Area of production Fermentation in steel at 23 °C for 10 days with South-east, south-west and north-west facing frequent pumping over. Ageing in steel for 8 months vineyards in the municipalities of Nus, Quart, Sight Chambave, Verrayes, Saint-Denis, Châtillon, Saint- Red ruby colour, bright Vincent at 450/650 m a.s.l. Smell Soil type Intense and persistent, fruity and floral. Scents of Morainic, loose sandy, with medium slope red fruits, violet, wild rose Varieties Taste 100% Pinot Noir The wine is well-balanced, with light tannins. The Number of plants per hectare alcohol content merges the phenols together with 6.500/8.000 the acidity giving way to a wine with an excellent Vine training system balance Guyot, Goblet, Cordon Serving temperature Yield per hectare 18 °C 8.000 kg Wine and food matching Harvest Local salami and cold pork meats, soups and Middle of September local recipes of stewed meat Campaign financed according to EC regulation n. 1308/13.
