David Meyers Associates, Ltd June 2012 Congressional Country Club Club Information The Congressional Country Club, ranked the #1 private, member-owned club in America, is a full service country club and golf course in Bethesda, Maryland, USA. Congressional opened in 1924 and was founded by former Presidents of the United States, Coolidge, Taft, Hoover, Wilson and Harding. On May 23, 1924, its doors opened to more than 7,000 persons of national and local prominence invited to the Gala Opening. The Club’s original purpose has been transformed to that of a family club with excellent facilities for golf, tennis and swimming, bowling and dining. Being one of the few clubs in the Washington area with an indoor swimming pool, Congressional now stands as one of the premiere clubs in the world. In the summer of 1977 the Club completed nine additional holes to meet the demand of its golfing members, thus providing two challenging 18-hole golf courses. Over the years, the Club and its members, as a tribute to the game of golf, which has rendered so much enjoyment to the membership, graciously offered its facilities to several major golfing events. In 1959, the USGA Women’s Amateur was hosted. The Executive Chef shall be responsible for; menu development; recipe development and testing; culinary staff hiring and training; creation of special event menus, recipes and concepts and controlling food costs. The Chef shall work collaboratively with the General Manager in the development and implementation of new concepts and products, while maintaining the culinary traditions, and in the monitoring and control of food costs, food safety and sanitation, quantity and quality assurance, and nutritional awareness. The successful applicant will be hands on, energetic, self-motivated professional with a track record of producing "world class" culinary products and working collaboratively with both front and back of house management and staff. • Responsible for all food production, including that used for restaurant, banquet event functions and seasonal services including poolside • Develops creative menus, food purchase specifications, and recipes utilizing local products, where available • Supervises and trains all culinary staff • Develops and monitors food and labor budget • Maintains the highest levels of professional food quality/sanitation standards Qualifications: • Culinary School graduate. • Five year’s experience as an Executive Chef or equivalent, preferably in the private club, fine dining, or hotel industry • Proven track record of team management, organizational and coaching skills • Solid understanding of a la carte and banquet revenue generation. • Food Safety Certification • Hands-on, excellent work ethic and goal oriented • Dynamic individual that is creative and embraces change • Knowledge of diverse culinary trends and cuisines • Demonstrated success developing and managing food/labor budget with comprehensive knowledge of expense control as it relates to service payroll and the forecasting/budgeting of expenses costs • Ensure creative, flexible and exceptional food items to exceed Member expectations • Must possess good organizational/time management skills • Demonstrated ability to manage a food operation in which restaurant and banquet functions occur simultaneous • Demonstrated strong kitchen related computer skills, with experience using purchasing and inventory systems • Visits dining room periodically for customer/member interaction/feedback and maintains physical presence during times of high business volume • Compensation: Commensurate with experience and competitive with market • Benefits: Excellent Health, Dental, Life Plans (available immediately); Vacation; 401k after 1 year Interested?
