Vanilla Bean Refrigerator Cookies

<p> Vanilla Bean Refrigerator Cookies</p><p>1 3/4 cups flour 1 1/2 teaspoon baking powder 1/8 teaspoon salt 1/2 cup butter 1 cup vanilla sugar* (1 1/2 vanilla beans + 2 cups sugar) 1 egg</p><p>1. In an electric mixer, beat the butter until light and fluffy. 2. Add vanilla sugar and beat until thoroughly incorporated. 3. Add egg and beat very well. 4. Combine the flour, baking powder and salt into a bowl. 5. Add the flour mixture to the butter and mix just until incorporated. 6. Spoon the dough into a rough log onto a sheet of saran wrap. Fold one side of the saran wrap over the cookie dough and, pressing with your hands, form into an even, oblong, square, circle, rectangle or triangle about 10 inches long. 7. Wrap tightly in the saran wrap and refrigerate until firm, at least four hours or overnight. 8. Heat oven to 400º. Grease 2 cookie sheets. 9. Unwrap the dough and carefully cut into slices 1/4-inch thick. Transfer to cookie sheets, spacing 1 inch apart. 10. Sprinkle with vanilla sugar. 11. Bake until edges are brown, about 12 minutes. 12. Transfer to cooling racks to cool.</p>
