<p>Gourmet Foods Course Number: 8750 Credit: ½ Course Length: One Semester Instructor: Dr. Curtis [email protected]</p><p>Purpose and Description:</p><p>Gourmet Foods takes an in-depth look into the fascinating world of foods and nutrition. This course offers the opportunity to develop skills in six key areas: food preparation skills and techniques; management skills in terms of planning, preparing and serving meals; preparing foods with an international flavor; participating in creative entertaining; application of nutrition to lifestyle; and exploration of food science. The use of technology throughout the course helps students understand biological and chemical elements of food as well as how molecular structures of various foods change with the introduction of both hot and cold. Both sanitation issues and food safety issues are explored.</p><p>Course Objectives:</p><p>Upon completion of this course, the student will be able to:</p><p>1. Apply the principles involved in planning and preparing family meals.</p><p>2. Select and use proper equipment in the food preparation process.</p><p>3. Apply correct procedures in the preparation of foods, sanitation, using cooking terminology, technical reading skills and principles of cookery.</p><p>4. Identify science concepts in the food preparation process.</p><p>5. Demonstrate effective management and teamwork practices in a laboratory situation.</p><p>6. Correlate the relationship of nutrition to the general health and well being of individuals.</p><p>7. Analyze factors affecting consumer decisions relating to foods.</p><p>8. Apply principles of storage and preservation of foods.</p><p>9. Plan, prepare and serve foods practicing entertainment etiquette and principles.</p><p>10. Plan, prepare and serve foods from different cultures.</p><p>11. Explore career and entrepreneurial opportunities.</p>
