<p> Sweet Potato Balls</p><p>3 cups cooked yams, mashed Grated coconut (or toasted) 2 Tabl butter, softened Chopped pecans ½ cup brown sugar, firmly packed (Greg mixed them and then had some of each kind) 1 Tabl pineapple or orange juice 10-12 large marshmallows</p><p>Mix yams, butter, sugar and juice well with electric mixer. Form a ball by scooping a heaping tablespoon of the mixture in your hand, then nesting a marshmallow in the mixture. Place another spoonful of the yam mixture over the marshmallow so that the marshmallow is completely covered. Gently roll in your choice of coconut or nuts. </p><p>Bake at 325 degrees for 5 to 10 minutes or just long enough to melt the marshmallow. </p><p>Makes 10 – 12 servings. </p>
