<p> Whole Grain Buttermilk Pancakes ***Serves 6, 2 4-inch pancakes each*** 1 ½ cups whole-wheat flour 2 teaspoons baking powder ¼ teaspoons baking soda 1 large egg 1 ½ cups buttermilk o If you do not have buttermilk you can make “sour milk” by mixing 1 ½ cups of skim milk with 1 ½ teaspoons of lemon juice 2 tablespoons vegetable oil 1 tablespoon sugar 1 teaspoon vanilla extract</p><p>1. Whisk whole wheat flour, baking powder, baking soda and salt together in a large bowl. 2. Whisk egg, buttermilk, canola oil, sugar and vanilla extract together in a small bowl. 3. Make a well in the center of the dry ingredients. Add the wet ingredients and whisk until combined. 4. Coat a large non-stick skillet, or griddle, with cooking spray and heat over medium heat. 5. Pour out three ¼ cup pancakes. 6. Cook until the edges are dry and you see bubbles on the surface, 2-4 minutes. Flip and cook until golden brown on the other side. Add in 1 cup part-skim ricotta cheese plus 1 tablespoon lemon zest to wet ingredients.</p><p>Pumpkin: add in ½ teaspoon pumpkin pie spice to dry ingredients. Place all ingredients in a medium sauce pan on low-medium heat and bring to a simmer. 2.
