<p>Amber Johnson Global Management and Operations | CUL 312 Katheryn Moonen 21 JUL 2016</p><p>Adapting Eating With a Twist to Córdoba Spain</p><p>Since my concept is a Paleo Mexican food truck I decided to take it to Córdoba, </p><p>Spain. Córdoba, Spain is a city in Andalusia located in southern Spain. Córdoba is also called Cordova in English. Since, I am taking it to a country that speaks Spanish, I decided to translate my menu into well, Spanish! The quarter in Cordoba has been declared a World Heritage Site because it has the imprint of the old splendor of the </p><p>Caliphate of Cordoba, which turned this city into one of the most civilized and distinguished in medieval Europe. The Medina town had 1,000 mosques, 800 Arab baths and an advanced street lighting system during the 10th century while under Abderramen. </p><p>There is Cathedral and the Mosque there that is the most single architectural space due to the Reconquest , there was an idea to build a Gothic cathedral inside the Mosque. The </p><p>Jewish Quarter also dates from the time period as well. It goes from the Mosque to the walls and the Almodovar Gate. It is the only one in the city.</p><p>I am keeping my menu paleo but just adding traditional Spanish dishes on to it. </p><p>The dishes that I choose to add are:</p><p>1. Ropa Vieja 6. Setas al Ajillo</p><p>2. Paella 7. Tortilla Espanola</p><p>3. Calamari 8. Gazpacho</p><p>4. Aceitunas- an Olive tapas 9. Sidra</p><p>5. Solomilla al whiskey 10. Vino de Jerez 11. Café con Leche 13. Churros</p><p>12. Tarta De Santiago</p><p>14. Flan</p><p>15.</p><p>16. I have all categories in my menu: entrée, small plates, beverages, and </p><p> deserts. I have also made sure to have my own and to include Spain’s traditional </p><p> dishes. I thought by translating the menu into Spanish was helping adapt to the </p><p> culture.
