Aged three weeks. A favorite! SAINT ANDRE - Triple crème cow's milk cheese produced in Coutances, in the Normandy region of northwestern France. It has a high fat (75%) content because it is further enhanced with heavy cream, making it dense, buttery and rich. The rind is covered with a velvety and powdery bloomy mold while the inside is ivory white in colour. The taste of the cheese is an intense version of the Brie, another famous French soft cheese. SAN ANDREAS - Raw sheep's milk cheese styled on the lines of the Italian Pecorino Toscano. It is a farmstead cheese from Bellwether Farms, aged for about 3 1/2 months during which it develops a pale ivory-straw coloured pate that is smooth, creamy with a few small holes or "eyes". Flavour wise it not too sharp or salty but rich with notes of butterscotch, nuts and hay.
