Cellar Notes: 2014 Sangiovese Sangiovese is one of ’s most well-known varieties and is the base for the easy-drinking, food-friendly . Grown primarily in Tuscany, Italians love Sangiovese for its bright acidity, fresh berry flavors, and that fact that it is a match for any dish with tomato sauce! According to Chuck, producing a good ‘New World’ Sangiovese is no easy task, requiring a lot of attention both in the and . Sangiovese loves the heat of Paso and puts out a ton of fruit which leads to diluted flavors if the vines aren’t severely thinned. Our Sangiovese comes from a vineyard where the manager ‘drops fruit’ twice a year. This means that fruit clusters are cut from the plant to bring the vine, berries, and canopy of leaves, in balance. In the winery, Sangiovese is prone to oxidation and will absorb the flavors of oak cooperage like a sponge. Chuck allowed this wine just a bit of oak—only 20% of the wine was aged in one year old . This hint of spiciness from the barrels is the perfect complement to the bright flavors of and cranberry.
