Holiday Cookie Sandwich CHOCOLATE MOUSSE

INGREDIENTS INGREDIENTS 2 ½ cups heavy cream 1 cup soft butter 2 ½ teaspoon vanilla extract 3/4 cup confectioners' sugar 4 egg yolks 4 cups sifted all-purpose flour 2 ½ tablespoons sugar 1 egg 7 ½ ounces milk chocolate, melted

GASTRONOMY 1 vanilla bean 1 pinch salt 1 cup Nutella® hazelnut spread METHOD METHOD Take a vessel, mix together egg yolks, Split the vanilla pod lengthwise with a knife and scrape out the seeds or use 2 teaspoons vanilla extract instead. In a bowl, mix the 2 ½ tablespoons sugar, and 3/4 cup butter, confectioners' sugar, egg, vanilla seeds and salt. Mix briefly to blend until all the ingredients are combined, but without over heavy cream. Cook over medium-low working. Add the sifted flour and mix again briefly. Roll this mixture up into a ball, wrap it with plastic wrap and let the dough rest heat, rouse it until mixture coats back of for 1 hour in the fridge. Take the dough out of the fridge and cut into 2 parts with a knife. Roll out each piece between 2 pieces of spoon, 5 minutes (do not boil). Remove from heat; brush quivkly in melted chocolate and vanilla. Strain into a parchment paper to a thickness of 1/4 of an inch. Rest the two layers in the fridge for at least 10 minutes (ideally 1 hour). Remove the bowl; chill until it cools down. With an electric mixer, beat remaining 1/4 cups heavy cream with remaining 2 layers from the fridge. Using a round cookie cutter, cut out cookies. Using smaller cutters, cut a shape out of the top cookies. Bake on 2 ½ tablespoons sugar until stiff peaks form. Stir 1/3 of whipped cream into cooled custard mixture, then the middle shelf of the oven at 350 degrees F for approx. 10 minutes. Take out of the oven and let cool.
