In a medium saucepan; bring 1 1/4 cups (300 ml) water to a boil. Combine oil, sugar, egg yolks, vanilla and hot water. Stir in couscous; cover. Remove from heat; let stand 5 minutes. Beat well. Sift all dry ingredients together. Beat into first mixture. Fluff couscous with a fork; cool, uncovered, 10 minutes. Add carrots, beets and nuts. Beat well. Fold in stiffly beaten egg whites. Place in a greased 9 x 13 inch (23 x 33 cm) pan. Stir in remaining ingredients except cheese. Bake in preheated 350 F (180 C) oven for approximately 50 minutes Refrigerate 4 hours or overnight. or until cake tests done. Cake changes colour during baking. Cool and frost with frosting.
