Whilst we do all we can as the Parish Council, there are some matters that require assistance from the Borough or County Council in order to progress. Of particular note is the condition of some of the village footpaths that run alongside the A143. We are currently liaising with Suffolk County Council on this matter and are hoping to see some improvements in this area soon. We have also been advised that repair work is expected to be carried out in February to the fencing

The attendance at our social events remained high during the winter months, and our volunteers were kept very busy. After a well-attended Afternoon Tea and AGM in November, our ‘cake makers’ were soon back in action baking for the Christmas Tree Light Up where HGNS provided the refreshments. Tibor Pollerman kindly donated all the mulled wine. One of our members, Kevin Slingsby, played seasonal music prior to the school choir’s performance. Many thanks to all involved. Another of our members, Ron Hardwick, had the honour of switching on the Christmas Tree lights. They have all been working on the Geocaching Badge, learning about GPS and OS maps as well as finding and creating geocaches. Eleven of them have been helping to lay a hedge and coppice hazel stools in Lawshall’s community woodland as part of their Forester badge. They’ve really enjoyed having a go at chopping and lopping and the hedge looks very impressive.

Next month there’s the district quiz and a bowling evening to look forward to. We are still on the lookout for Cubs, Scouts or Leaders from the 1970’s to attend the opening of our new Scout Hut. Work is progressing so if you know someone who was involved in the Scout Group back then, please let us know. The Beaver Colony have completed a night hike around Ickworth Park. We are so lucky to have the park on our doorstep it’s ideal for hiking. This month the Cubs have a trip to the Theatre Royal to see a musical adaption of The Jungle Book. They know all the words to the Jungle Book songs so will be singing along loudly. They will then have the chance to perform themselves when a dance teacher visits to show them how to create a Dragon Dance in time for the Chinese New Year. Chicken Saag Massala is a spinach (saag) based curry, flavoured with garam masala, dried fenugreek and sliced garlic. You'll serve it with a buttered pilau rice, which is spiced with aromatic cardamom and star anise for a fresher tasting take on a takeaway favourite. Ingredients for 2 people [double for 4]

1 large british 1 brown 150g baby 1 chicken 1 tsp dried 10g coriander 1 tbsp chicken onion leaf stock cube chilli flakes garam breast fillet spinach masala

2 garlic 6 2 tsp 2 tbsp 1 star 130g cloves cardamom ground tomato anise basmati pods fenugreek paste rice You will also need: Butter, sugar, vegetable oil

Cooking Instructions for 2 people [double for 4] : 1 Boil a full kettle Peel and finely slice the brown onion[s] Peel and slice (don't chop!) the garlic Heat a large, wide-based pan with a drizzle of vegetable oil over a medium heat and once hot, add the sliced onion and cook for 5 min or until it's starting to soften 2 Meanwhile, add the baby spinach to a colander and pour boiled water all over it until it's wilted Rinse the wilted spinach under cold water until it's cool enough to handle Squeeze the water out of the cooled spinach (use clean hands for ease) then chop it roughly Re-boil the kettle

Go easy!) to the softened onion and cook for 30 sec or until fragrant Add the chicken breast fillet[s] to the pan and cook for 4-5 min, turning once until it's nice and browned 4 Meanwhile, dissolve the chicken stock cube[s] , tomato paste and 1 tsp [2 tsp] sugar in 350ml [650ml] boiled water – this is your chicken & tomato stock Add the chicken & tomato stock and chopped spinach to the pan, reduce the heat to medium-low and cook, covered, for 15-20 min or until the chicken is cooked through and the sauce has thickened 5 Meanwhile, crush the cardamom pods open by squashing them with the side of a knife Melt a knob of butter in a pot with a matching lid over a medium heat Once melted, add the split cardamom pods and star anise to the pot and cook for 1 min until fragrant 6 Add the basmati rice to the pot and cook for 1 min further, then add 300ml [600ml] cold water and bring to the boil over a high heat Once boiling, reduce the heat to very low and cook, covered, for 10-15 min or until all the water has been absorbed and the rice is cooked Once cooked, remove from the heat and keep covered until serving – this is your pilau rice 7 Meanwhile, chop the coriander finely, including the stalks (save some leaves for garnish!) Using two forks, carefully shred the cooked chicken , and mix it through the curry – this is your chicken saag masala Stir the chopped coriander through the pilau rice Serve the chicken saag masala with the pilau rice. Garnish with the reserved coriander leaves. Enjoy!
