I attended a counselor tour at Villanova last year where they had us meet with the Director of Dining Services -- that was a first! He is a responsive fellow who told us stories of working with students and parents on individual and unique dietary needs. It is their own food service program and it was all very impressive. Montana State University
RIT has a designated area of foods free of the "Top 8" (major allergens). It's a well-stocked and beautifully presented area. In their other dining spaces, any staff member is willing to custom make anything for a student to meet their dietary needs.
Lehigh has a special area with a designated staff member to custom make food and maintains a stocked with non-dairy milk options and other allergy-friendly foods
George Washington has dorms with kitchens--note that a shared kitchen would not be acceptable for someone who is affected by cross-contamination
