Caramelized Goat Cheese Salad with Pear & Honey Orange Dressing

PREP: 5-10 minutes Equipment: COOK: 5 minutes Knife & cutting board Small bowl for dressing TOTAL: 10-15 minutes Plate for serving SERVES: 2 (Frying pan/skillet or oven tray or kitchen torch) to caramelize the goat Ingredients: cheese 2 handfuls of preferred soft (not crunchy) lettuce leaves (ex. butter lettuce, lambs lettuce, or a spring mix) 1 pear, finely sliced, “carpaccio” style Goat cheese: Either one large, ½ inch thick, goat cheese round or 2 or 3 smaller sizes slices. 1 tablespoon (15 mL) honey Half cup (150 mL) orange juice Pinch of (white or brown) sugar

Instructions To make the dressing mix the honey and orange juice in a bowl until the honey has fully dissolved into the orange juice. Cover the plate with thin slices of pear, “carpaccio style” and place the lettuce leaves on top. Drizzle over the honey orange dressing. Sprinkle sugar on the goat cheese and then either blow torch, grill or fry to caramelize. Place on top of the lettuce leaves. Season to taste.

Tasting wine: ROSADO ( aka Spanish rosé)

This week we will be tasting ROSADOS, ideally with a PALE COLOR and not "Claretes”. Claretes are made with white and red grapes, while rosados are made with only red grapes.

When to open: About 5 minutes before the tasting.

Serve cold: 45-55°F / 7-13°C (best to chill in the fridge for about 30-40 minutes)

Raúl will be drinking: 1 from Bodegas Muga (very pale) DOCa & 1 from a Petit Verdot, from Pago del Vicario.
