“The Cuvée 700 concept is unique in Champagne and is the opposite of a non-vintage wine,” they explain.“We seek excellence rather than homogeneity, respect for the character of the vintage rather than its denial, and we prefer to strive for a great wine rather than maintain a ‘house style’.” They blend in small portions of reserve wines in order to reinforce the complexity of the cuvée without hiding the character of the base year.

The wines come from Jacquesson’s three grands crus and two premiers crus, using only the first pressings.They’re vinified in oak casks, and almost always unfiltered. They are thus, above all, a Grand Vin de Champagne. They have the potential to age for a remarkably long time – which is why Jacquesson offers it as both a current release (undergoing more than four years’ lees ageing in the bottle) and, further down the track, as a late-disgorged (“dégorgement tardif ”, with more than nine years on yeast lees) wine.

So what’s this 700 business? Since the wine contains fruit from more than one harvest, it isn’t allowed to be identified by a year. Hence the numbering system – but the figure wasn’t plucked from thin air. When Laurent and Jean-Hervé ditched the NV convention in 2000, they decided to give the wine the production number the cuvée had in their cellar book. Cuvée n° 1 had been made in 1898 by Jacquesson to celebrate its 100th anniversary.

There are no secrets here, just great Champagnes, and better than ever.

Vinification took place, as usual, in large oak barrels, on the lees and with weekly bâtonnage. The Chardonnays were soft but very fine, the Pinot Noirs fruity and vinous while the Pinot Meuniers were more variable in quality so we decided to reject any parcels that were less than successful.

The blend is composed of 54% Chardonnay, 20% Pinot Noir and 26% Pinot Meunier and the wines from the 2006 harvest were completed with reserve wines from 2005 (22%) and 2004 (5%). 3.5 g/L dosage. Disgorged: 1st quart 2011

NV Jacquesson 'Cuvée 735', Dizy. 320

The wines were vinified as usual, in large oak casks on their lees, with weekly batonnage and with absolutely no filtration. The sharp contrasts in the weather throughout the year were reflected when tasting the vins clairs. The chardonnays were fine, complex and mineral; the pinot noirs were a bit more varied, the best showing the power and maturity that one looks for; the pinot meuniers were less consistent, with quite good fruit but less power than expected

The blend of Cuvée n° 735 is 47% Chardonnay, 33% Pinot Noir and 20% Pinot Meunier and the wines from the 2007 harvest were completed with reserve wines from 2006 (22%) and 2006 (6%). 3.5 g/L dosage. Disgorged 2nd quart 2011 NV Jacquesson 'Cuvée 736', Dizy. 315

The 736 is based on the 2008 harvest with reserves (34%) from 2007 and 2006 and composed of 53% Chardonnay, 29% Pinot Noir and 18% Meunier. This year they thought the wine tasted the best at just 1.5 grams per liter of dosage and so it is an extra brut. It has a great pale straw color and a serious creamy, sweet hazelnut, fresh baked baguette nose. On the palate it is super expressive detailed Champagne with great minerality. 1.5 g/L dosage. NV Jacquesson 'Cuvée 737DT', Dizy . 355

The wines were vinified in casks, on lees for 90 months, with regular bâtonnage and were blended to produce Cuvée n° 737DT . 2009 provides the backbone of the Cuvée; the reserve wines, comprising 30% of the final blend, come mainly from the great 2008 vintage to which we added some wines from the Cuvées n° 735 and 736 which we have kept back specially for this purpose. With Avize and in the Côte des Blancs, and Aÿ, Dizy and in the Grande Vallée de la Marne, our Cuvée consists entirely of Grands and Premiers Crus and comprises of 43% Chardonnay, 27% Pinot Noir and 30% Pinot Meunier. 1.5 g/L dosage. NV Jacquesson 'Cuvée 740', Dizy. 225

Our 2012 harvest from Ay, Dizy, Hautvillers, Avize and Oiry. Winter was long and cold; spring and early summer were very wet and there were severe attacks of mildew. However, a superb end to the growing season gave us a small crop of remarkable quality. The Cuvée is completed with several reserve wines from previous (20%) 700 Cuvées.
