    CHINESE This is my version of a Spice Bag. It’s a bit convoluted to do the whole, bit maybe start by taking a couple of the elements; the chips, the chicken and seasoning. Arun’s Spice Bag Fried Chicken & Chip Shop Chips charred pineapple & peppers, curry mayo Serves 4 or more Chicken Ingredients Buttermilk Bath Ingredients 250ml buttermilk 1 tsp chilli flakes 500g or so boned & skinned chicken thigh meat cut into long lozenges, all gristle & sinew removed Crisp Crumb Ingredients 200g corn flour 200g instant polenta, fine zest of half an un-waxed lemon, fine grated Spices: 1 tsp Chinese 5-Spice, ½ tsp fresh thyme Good amount of grapeseed oil for deep frying Spice Bag Seasoning Ingredients Spices: 4 tsp black pepper corns, 2 tsp coriander seeds, 2 tsp fennel seeds and 2 tsp Chinese 5-Spice all finely ground, then 1tsp cayenne pepper, 4 tsp fine sea salt all mixed together well Method 1. Take a large bowl, add the buttermilk and chilli flakes, add the chicken pieces, cover with cling film and pop in the fridge for at least 4 hours or overnight. 2. When it’s time to cook, place all the Crisp Crumb ingredients in a bowl mix well. Remove the chicken from the buttermilk bath, pop them into the Crumb bowl, dredge and mix well, then set aside on a wire rack 3. Meanwhile, pour the grapeseed oil into a deep pan, or an electric *deep fat fryer set to 170°C. 4. Next, pick up individual chicken pieces with kitchen tongs, and gently place them into the fryer.

Almost everyone royalty and commoner ate the same food, however fancy or plain. The royal kitchens merely drew on a wider variety of foodstuffs and in greater quantities. Britain was a worldwide trader since the 16 th century and could afford to import the best the world had to offer from tea, coffee and rice to exotic spices and fruits and all these found their way into home cooking. The British Breakfast The British consider it their finest meal. A truly traditional British breakfast would include Baps (a soft round roll) or some other traditional bread with preserves, bacon, sausage, tomatoes, mushrooms, eggs - boiled, fried or scrambled, ham kedgeree, stewed prunes, sautéed kidneys, smoked haddock or kippers, cereals with milk and of course tea. The English breakfast owes, in particular much to the Scots. They eat an even more substantial breakfast that the English and the Welsh or the Irish. They consume vast quantities of porridge and considerable amount of bread usually in the form of a breakfast roll called a ‘Bap” and drink large quantities of tea sometimes laced with whisky. Aberdeen was the birthplace of the breakfast sausage, while Dundee is the home of marmalade without which no breakfast is completed. Bacon is in original entirely English. Ham, which also often figures on the breakfast table, is the cured hind leg of the pig. Only the English cured the pig, usually by salting, while the rest of Europe ate it fresh.

They laughed at the pig in the kitchen when Ireland lay groaning in chains, But the pig paid the rent, so no wonder our ‘smack’ for his breed still remains, And what has a taste so delicious as ‘griskins’ and juicy ‘crubeens’, And what gives health, strength and beauty like bacon, potatoes and greens? Background The above song ‘Bacon and Greens’ was written by Con O’Brien and first appeared in print in September 1930 in the Cork Weekly Examiner. This Irish love affair with pig meat was still evident in Pat Short’s chart topping 2006 song ‘The Jumbo Breakfast Roll’ which describes the Celtic Tiger phenomenon of wrapping the components of the cooked Irish breakfast in a half baguette for consumption by cash-rich, time-poor citizens. These same ingredients (bacon, sausages, black pudding etc.) form part of the popular all-day Irish meal known as a ‘mixed grill’ described so evocatively in the writings John McGahern (Maher 2014). Considering the primacy of food in people’s lives generally throughout history, it is logical that food be reflected in their songs and poetry.
