SHORTCAKE INGREDIENTS • 2 cups Kamut flour • ½ cup sugar • 4 tsp baking powder • ½ tsp salt • 1 cup cold butter • 1 egg • 1 cup milk

DIRECTIONS Combine Kamut flour, sugar, baking powder, and salt in a large bowl, then cut in cold butter with a pastry cutter until crumbly. Whisk together the milk with the egg. Make a well in the centre of the flour mixture and pour in milk mixture; mix with a fork until just combined. Quickly knead the dough with hands, about 5 seconds. Place in a cake pan or form a cake on a cookie sheet. Bake in a 425˚F oven for 15 minutes or until tooth pick inserted comes out clean. Serve while warm, top with butter, whipped cream and glazed strawberries (recipe below).

Ontario soybeans Farmers in Ontario will begin planting full-season varieties of soybeans May, or when weather conditions are adequate. The land needs to be free from snow, pooling water,and relatively dry so heavy tractors and planters do not compact the soil. Generally, when the soil temperature is 14-16°C at noon at a depth of 2.5-5cm, the soil conditions are suitable for planting and there is a low risk of frost after emergence. These conditions will be met in most areas of the province between May 10th and May 31st.

Soybeans usually take between 95 to 105 days to grow from seed to maturity. The mature standing soybean crop is harvested with a grain combine in the fall, usually in October or November. The majority of soybeans grown in Canada are grown in Ontario, around 80%. The balance is grown mainly in Quebec and Manitoba. Although soybean production takes place throughout Ontario, in a wide variety of soil types, the bulk of the crop comes from the southern portion of the province. Of the 2.5 million acres of soybeans planted across Ontario in 2012, 1.4 million acres were harvested in southern Ontario.

Ontario soybeans can be found at your local grocery store, in products such as soy beverages and tofu. Tofu, also known as soybean curd, comes in a variety of textures, from soft to extra firm. Soft tofu is suitable for dips and creamed soups. You can also find flavoured tofu products, such as mango or vanilla, which are great for deserts and smoothies. Firm tofu is dense, solid, and maintains its shape. It can be sliced or cubed for use in stews or crumbled to replace ground meat. It is also great for grilling on the BBQ and will absorb the flavours of the foods it is cooked with. Firm tofu used in the BBQ sandwich recipe on the next page is a great way to add a meatless option to your next backyard event. Meanwhile, combine coleslaw (or cabbage), mayonnaise, vinegar, garlic powder and pepper in a medium bowl. Drain the onion. 4. To assemble sandwiches, place about ⅓ cup of the coleslaw (or cabbage) mixture on each bun and top with a tofu slab, a pickle slice and a few onion slices. Spread any sauce remaining in the pan on the top buns.

JERK PORK CHOPS INGREDIENTS • 6 Ontario centre-cut pork chops, boneless, about 1 inch (2.5 cm) thick • 1½ tsp (7 mL) ground allspice • ½ tsp (2 mL) salt • 1 tsp (5 mL) EACH — dried thyme, ground coriander, cinnamon, nutmeg, garlic powder • ¼ tsp (1 mL) cayenne pepper • 2 Tbsp (30 mL) vegetable oil

DIRECTIONS 1. Trim off any visible fat from pork chops. In a small bowl, combine all seasonings and oil; mix to blend. Spread paste mixture on both sides of each pork chop. Place chops in a sealable plastic bag, or baking dish and cover. Chill for 3 hours or overnight in refrigerator. 2. Preheat barbecue on high for 10 minutes. Reduce heat to medium. Grill chops for 5-6 minutes per side until they are browned and internal temperature is 160°F (70°C). 3. Serve with colourful sweet potatoes and fresh green beans.
