Hello,

Welcome to the 2014 Cattlemen’s Ball of Nebraska. On behalf of the many valued committee chairs and volunteers who have put so much time and effort into this outstanding event, we would like to welcome each and every one of you to western Nebraska, Banner County, and the Hoot Owl Ranch.

We are honored to have been given the opportunity to co-chair this event. First of all, we want to thank the host families, Jeff and Kathy May as well as Kenny and Misty Stauffer, for allowing us the opportunity to work with a truly dedicated group of volunteers in an effort to help raise funds for what we consider one of the greatest, if not the greatest charity not only in Nebraska, but throughout the entire nation. The Cattlemen’s Ball is a unique opportunity to help showcase beef as a part of a healthy diet, showcase the western lifestyle, and raise funds for cancer research at the Fred & Pamela Buffett Cancer Center at the University of Nebraska Medical Center. The hours of work put into this event were at times frustrating, but also so gratifying when we took time to realize we were given a once-in-a-lifetime opportunity to make a difference in the lives of so many people who have been, currently are, or will be in the future diagnosed with cancer. The opportunity to help make a difference in cancer research through a nationwide leader in research and treatments while showcasing our lifestyle and our way of life is something we are thrilled to share with each and every one of you in our unique and beautiful setting here in Banner County.

Finally, we want to take the time to thank our families for all the support and patience they have given while we worked to do our part to help bring you this amazing event and help ‘Corral A Cure.’

Vice-Chairman It is my pleasure to welcome all of you to this year’s event. Thank you so much Dick Miles (Ann) for being here and supporting the worthy cause of cancer research while enjoying McCool Junction, NE beef and beautiful Banner County.

Treasurer The group that has been gathered here for this weekend is first rate! I could see Larry Shavlik that over 5 years ago, when a few of the Advisory Board members came out to Bartlett, NE Banner County to meet them. Yes, it has been that long that the Stauffer and May families have been anticipating this once-in-a-lifetime event! That is dedication, Executive Secretary commitment, and true passion. Kenny, Misty, Jeff, and Kathy are examples of Deb Hansen what true giving looks like. They have given their time, resources, and talent to Wisner, NE make this year’s ball unlike any other. Thank you so much for a job well done!

Board Members It is that passion that drives every one of the volunteers to make a difference today. The 2014 Cattlemen’s Ball of Nebraska is hosted by Jeff and Kathy May (owners), and Kenny and Misty Stauffer (ranch managers) of the Hoot Owl Ranch, located in the Southwest Nebraska Panhandle. The ranch includes a commercial cow-calf operation and registered black angus bulls, and aims to preserve the western way of life.

Crockpot Pot Roast Misty Stauffer Shares Her Family’s Favorite Beef Recipe

It’s Not Your Grandma’s Roast!

“When Kenny and I got married 16 years ago, there was no way I would have ever dreamed that roast would be our family’s favorite meal. As a young girl, I went over to my grandparents’ house every Sunday after church for lunch. Almost every Sunday, my grandpa would make orange rolls, potatoes, carrots, and gravy, and my grandma would make roast. Now, I’m telling you, the gravy was the best part because she always overcooked the roast in the oven. If you’ve ever cooked a roast in the oven you know that it loses its juices and wonderful flavor and ends up very dry. After about two years of marriage, I finally gave in and cooked a roast in the crockpot and it became our favorite meal! You can’t beat a roast and potatoes. So here’s my version of roast, served three ways—I guarantee it’s not your grandma’s roast!” —Misty Stauffer Crockpot Pot Roast 1 (4-pound) roast (We love chuck and pikes peak.) 1 box beef broth (once emptied, fill with water) 2 tablespoons minced garlic Salt and pepper 1 whole white onion, quartered Combine all ingredients in a crockpot set to high. (If your roast is frozen, cook for 8 hours; if your roast thawed, cook for 5 hours.) When it’s ready, the beef will literally fall apart. You won’t have to do anything except use a fork to shred it before serving.

I usually cook the roast overnight if I need to use it for a crew of hungry guys at lunch time. Here are two ways I serve the roast for lunch.

BBQ Beef Sandwiches BBQ sauce 2 cups ketchup 1 cup brown sugar 3 tablespoons liquid smoke 2 tablespoons garlic powder 2 tablespoons chili powder Salt and pepper Cumin and cayenne pepper to taste Shred the roast after it’s been cooked. Return to the crockpot and add BBQ Sauce ingredients. Serve on a Kaiser bun.

Shredded Beef Tacos Shred the roast after it’s been cooked, add taco seasoning, and return to crockpot. Serve shredded beef in tortillas and top with lettuce, shredded cheese, guacamole, and salsa. Cattlemen’s Ball Hoot Owl Ranch Beef Program Saturday, June 7, 2014
