Get a taste of nostalgia at the Colonial Club and embark on a gastronomical journey Colonial Club through Singapore’s rich culinary heritage. A harmonious blend of East and West, colonial cuisine is a fusion of expatriate taste and local ingredients, resulting in a delicious merger of . Savour a delectable mix of heritage cuisines, including Hainanese-style western delights, Nyonya dishes, and local favourites with British-Colonial influence.

To curate the menu, our chefs travelled to different parts of Singapore and to suss out the dishes most representative of the colonial era. They then sought the best chefs across the Singapore Strait and diligently mustered their recipes to showcase the best of Singapore’s colonial favourites.

The Origin - Hainanese Delights

In the late 18th century, the British voyaged to the East Indies for trade and commerce. Many workers from all over the region also migrated to Malaya and Singapore in search of a better life. They left their homeland and worked as cooks under the Colonial British Administrators and the Military. Their repertoire and recipes were adapted to the taste buds of the British colonial community as well as the local population.

Eventually, they developed a British colonial cooking style with a touch of Asian flavour that is unique to Malaya and Singapore such as Chicken Chop, Fish and Chips or . These celebrated dishes that have gained tremendous popularity in Malaysia and Singapore today include Hainanese Chicken , Kapitan Chicken and Inchi Kabin (Nyonya ).
