hen is a potato not a potato... when it's a sweet potato. Totally different things. You know, as in yams. Wait, yams are a tuber but not the things typical- ly found on American tables? Ah, the orange-hued ones most Americans associate with sweet potatoes are indeed sweet potatoes, while yams are lighter in color and lack the beta karoten that give the colorful version their health heft. Gotcha.

If there is something most people agree upon it's that sweet potatoes are largely associated with super-sweet holiday side dishes with marshmal- lows to boot, baked goods and – in recent years – a fry variation that makes us feel less guilty.

Fries are a good example of a different philos- ophy when it comes to cooking sweet potatoes. Instead of accentuating the sweet in them, use that sweet to balance savory elements. After all, good cooking is based on balancing different tastes. I never realized their savory potential until about 20 years ago at a diner in Cutler Ridge where they served mashed potatoes made of half white and half sweet potatoes, prepared ex- actly like traditional mashed potatoes. Wire Magazine sat down with Jorge Freire to discuss Pho- to Studio Miami and find out more about their shoot with Sergey Boytcov.

Rafa Carvajal: Tell our readers about the work you do at Photo Studio Miami. Jorge Freire: Photo Studio Miami is a manifestation of a dream Abel and I had nearly 14 years ago. I had been do- ing photography for 10 years at that point, but it was more of a hobby. Abel saw the potential in me to make this bigger than just an idea. He bought me my first lights and back- drops, and started shooting with me as well. Fourteen years later, here we are getting published all over the world and part of the amazing family at Wire Magazine. While we are known for the beautiful men we shoot, we also shoot fashion, fitness, families, and headshots – you name it, we do it!

RC: What did you enjoy the most about working with Sergey Boytcov? JF: Well, it is a funny story because he doesn't speak En- glish and we don't speak Russian. Luckily, this guy is more than just looks. His funny and animated personality is what really helped us transcend the language barrier. So, through improvised sign language, mirroring poses and a whole lot of laughter, we were able to create the images you see here.

RC: How did you meet Sergey? JF: We met on Instagram. Sergey sent us a private message saying, "I will fly to Miami. Can we do a shoot?" We looked at his images on Instagram and said, "Yes!" We agreed on a date and he showed up. It was like ordering a beautiful model online, ha-ha.

RC: What is the biggest challenge of working as photogra- phers of male models? JF: We have been at this for some time now and things have changed. While years ago it was all about a beautiful face and fit body, nowadays all these beautiful guys feel like they have to be competition ready before they shoot. This can be problematic because they hold themselves to strict diets and water limitations that don't allow them to be at full charge throughout the entire shoot like we need them to be. No one understands how difficult it is for them to constantly flex, pose and look natural while doing it. In our studio, we now have an area where they can take breaks to eat and recharge, so we can get the shots we need to book them on magazine covers.

18 WIREMAG.COM #17 2018 RC: What do you enjoy the most about your work? SERGEY BOYTCOV JF: The thing we enjoy the most is how different the work can be from shoot to shoot. One day we can be shooting corporate head- shots, and the next we'll be shooting mermaids at the beach. Also the friendships we have made with other people in the industry will last a lifetime. It takes a team of people to bring a lot of these ideas to life, and when you have a group of artists coming together to create a vision the result is magical.

RC: How do models usually come to you? JF: Instagram has created a social media platform where one photo can reach an audience on the other side of the world in seconds. This is also the way models are able to reach out to us and vice ver- sa. Scouting models was so difficult years ago, now all you have to do is scroll through your phone. Just look at the way we met Sergey!

RC: What is your current struggle? JF: The largest struggle is that there are not enough hours in a day.

RC: What else would you like to share with Wire Magazine read- ers? JF: First of all, thank you to our family at Wire Magazine for all the love and constant support you guys give us.
