The classic gin and tonic is known for its modest simplicity and never fading popularity. With such a wide variety of gins out there, there is lots of room to play around with this beloved beverage — and Singaporean bartenders are getting in on the act.

Adam Leibrandt, Group Beverage Manager for the Lo and Behold Group which runs The Rabbit Hole believes gin is perfect for Singapore climes. “Gin is made for drinking outdoors, it’s made for the heat especially compared to the darker spirits that have traditionally been popular in Singapore,” he says. “Singaporeans are foodies, they are looking for complexity, for spice and interest. Gin takes that and puts it in a bottle. Herbs balanced with spices, perfect for our humid outdoor climate. The variety of gins available makes it easy to have something for everyone unlike say, rum or vodka which are more one-dimensional.”

This shop house bar on Ann Siang Hill is one of the only bars in Singapore to serve gin on tap, infusing it with herbs from their rooftop garden.

Their latest spin on the gin and tonic is called ‘High Noon’ which is made with Hendricks Gin and Imperial Tonic. The mix is flavoured with fresh lemon, homemade dill syrup and elderflower before its shaken with ice. The drink is then topped with Burma Tonic and garnished with dehydrated dill, served in a glass with a sea salt rim.

Leave the stressful city metropolis behind and take a tumble down The Rabbit Hole. The bar has been re-launched as a quaint little gin bar surrounded by a lush and quaint garden.

The Gin Garden is special as they pair their G&T’s with ingredients plucked from their very own garden and serve homemade tonics. This aims to bring out the individual character of each gin and with 15 varieties to choose from, you’re sure to stumble upon some interesting flavours.

May we recommend the ‘Plymouth Gin’ – made with dehydrated lime disks and washed over with subtle juniper influence with no bitter botanicals, giving you a clean, crisp gin.

The Spanish like to do things a little differently and such traditions are embraced at My Little Tapas Bar. Their new Gin Toneria menu offers gastronomic gin and tonic experience with a new DIY concept.

The menu features 18 different gins, 17 botanicals and up to 7,000 possible permutations. With such a generous scope for selection, you really can let your imagination run wild. Those with a lesser taste for adventure won’t be left out as they have staff available on hand with recommendations for signature mixes.

The 18 gins are categorised into the Classic ($18+) and Premium ($24+) sections, including Xoriguer, G’Vine, Fifty Pounds, Plymouth Navy Strength, London No. 1 and Mascaro

The Tippling Club has been long known for their wacky cocktails and avant-garde approach to mixology. Their drinks look as is they should be mixed in a cauldron rather than a bar as they are either bubbling away or leaving a misty trail on the way to your seat.

If you’re in the mood to be a little experimental, try their new ‘Sippin’ on G&T’ cocktail. This potion is made of London Dry Gin, Becherovka (herbal bitters), peppermint and vanilla extract. The cocktail is heated in a water bath and served warm; this produces a floral aroma with a minty kick which makes it perfect for the end of a meal or paired with a dessert.

With a concept based on the classic novel, there is a delightful strangeness to this bar. Their peculiar yet delicious gins aim to please through their use of fruit, flowers, herbs and spices, which they believe are the perfect ingredients to spruce up what many believe to be a ‘boring drink’.

Their new Strawberry Fields is a citrusy and fruity gin drink with a surprising spice-and-herb finish. Made with Bankes gin and Fever Free Tonic water, the bartenders then add succulent strawberries and sprinkle cracked black pepper adding a spiciness to the blend. The drink is then topped with a sprig of fresh dill to give it a herby flavour.
