of Castilla-Leon for five centuries, boasts a masterpiece of Spanish Gothic architecture: the cathedral of Burgos, declared World Heritage Site by UNESCO. Visiting the cathedral, you will find a long list of exceptional works of art in its interior. These include the starry dome that covers the tombs of El Cid and Doña Jimena, the choir, the sarcophagi and the Golden Staircase. After visiting the Cathedral you will have time to explore the old medieval quarters of Burgos. Our guide will be there to help you. You will continue to Covarrubias, a lovely village where San Cosme y San Damián Collegiate Church and Doña Sancha and Doña Urraca squares invite travelers to enjoy a leisurely visit, imagining that time has stood still in the Middle Ages and that little has changed since the year 987, when the town was founded. After a short visit, our next stop will be the Ribera del Duero, the birthplace of one of the most acclaimed Designations of Origin for wine. Something that amazes in this region is its charismatic cuisine. Upon arrival, we wil visit a typical local restaurant where you can taste one of its best main courses such as suckling lamb baked in a wood-fired oven, soused trout and cod stew. For dessert, you will try the delicious "yemas" (a sweet made with egg yolks and sugar), fresh cheese with honey and walnuts, or caramel almonds. After enjoying these delicacies, we wil visit a wineyard and taste some of the wines produced in the region. The Ribera has a common denominator: the Tempranillo grape. Under the name Tinta del País or Tinta Fina, it has made known a native fruit of Ribera del Duero, providing the colour, aroma and body that make these wines unrepeatable. As well as Tempranillo, the Governing Council allows other varieties: reds like Cabernet Sauvignon, Merlot, Malbec and Garnacha Tinta or the only authorised white: Albillo or Blanca del País. Six grape varieties for an exceptional and unmistakeable flavour, marking the quality of every bottle. Continue to Sigüenza, the last stop and the cherry on the cake. In Sigüenza you will enjoy a real journey back in time as you visit the cathedral, with its famous sepulcro del Doncel (tomb of the youth), chapels and cemetery. The Parador de Sigüenza is an imposing medieval castle situated in an Arab fortress built atop a Roman settlement. It was built in the VIII Century after the muslime invasion. From the outside it resembles a medieval fortress, with towers and a Romanesque portico and a magnificent rose window. These are the perfect accommodations, inviting you to enjoy an ancient city, where the stones speak of history, tradition and legend. The hotel's traditional Castilian furnishings are displayed with fine taste in the spacious, welcoming guest rooms, making you feel as if you are lodging in a real palace.
