Fried Brown Rice with and Eggs

Ingredients: 2 Tbsp. oil 1 small yellow onion, cut into ¼-inch dice 2 medium , cut into ¼-inch dice 5-6 scallions, white and green parts separated, both parts thinly sliced 2 large cloves, minced 1 Tbsp. peeled minced fresh 4 cups pre-cooked short-grain brown rice (from 1.5 cups dry), day old is best* 4 large eggs, lightly beaten 2 Tbsp. soy

Method: 1. In a large wok, heat 1 tbsp of the oil until very hot. Season the eggs with and pepper and pour into the wok. Scramble the eggs over high heat until just cooked through, about 1 minute. Transfer to a paper towel-lined plate. 2. Heat the remaining oil. Add the onion, carrots and white parts of the scallions and stir-fry over high heat until softened, about 5 minutes. Add the garlic and ginger, and until fragrant, about 1 minute. 3. Add the rice and all but 1 tablespoon of the greens and stir-fry until the rice is heated through and beginning to brown, about 3 minutes. 4. Remove the skillet from the heat and add the eggs and soy sauce. Transfer the to bowls, garnish with the remaining 1 tbsp of scallion greens and serve. Serves 4 as an entrée
