SALAMANCA is one of Spain´s most visited old historic towns. We´ll have time to stroll its streets and have a look at Plaza Mayor, one of the most beautiful squares in Spain and one of the best examples of Baroque architecture in the Peninsula.

The Old and the New Cathedrals, two masterpieces not to miss. The University, the oldest in Spain with its historic building, is also worth a visit. Casa de las Conchas, renowned for its main façade which is covered with hundreds of shells. La Clerecía Towers and enjoy some spectacular views over the city from the tower balconies. After this pleasant walk, time for a quick break to get our strength back. There are some excellent restaurants with top quality dishes. Traditional and avant garde cuisine with locally grown products, featuring mouth watering dishes such as Guijuelo cured ham, “morucha” beef, lentils from Armuña, chanfaina (rice with a chorizo and pork stew), roasts… locally produced Salamanca cheeses, olive oils and excellent wines that you will have the opportunity to taste later in the day.

A testimony: “When I was offered to join a trip to the Duero Valley, I had no idea where I was going. We hired a car and drove about two hours and a half from Madrid to Hacienda Zorita. Along the way, the landscape became more and more sparse, evergreen holm oak trees and vineyards started popping up on the horizon. It felt a bit like Tuscany although I knew I was in Spain! As we drove into Salamanca, I had to hold my breath.

My friends and family had told me the city was amazing, but I did not expect this! I found out it was declared a UNESCO World Heritage Site in 1988. I wasn’t surprised! We saw amazing cathedrals, beautifully restored palaces and the buzzing Plaza Mayor. It reminded me of Florence... but without the countless tourists flooding the place!

LA RIOJA: Wine is an art that dates back to immemorial times in LA RIOJA. The Romans already appreciated the wine from this region as exceptional and fostered grapevine planting, although they did not introduce this crop in the area.

The Phoenicians made wine and so did other peoples before them, such as the Berones, who traded the wine of Ancient Rioja.

Some historians suggest that out of the old writtings and gravings, wine was elaborated in La Rioja more than 8.000 years back.

“I wish to make prose in the plain romance, that people use to talk to their neighbours, as I am not so learned as to use a different Latin, that will be well worth, I believe, a glass of good wine”... poem written by Gonzalo de Berceo (c.1230).

La Rioja reminds one of wine, even in its name. Its geographical location on the Ebro river valley, its climatic conditions and the make up of the soil have turned it a privileged area for growing grapes, making our wines inimitable.

The passage of time has created a particular local culture based on making and ageing wine and turned the people of this land into true specialists in this difficult art.

DAY 4. THE HEART OF LA RIOJA

How about an optional early morning balloon flight in the most flamboyant and spectacular imaginable way? Vibrant vineyards stretched out towards the horizon with the mountains in the background. Once you reach a suitable altitude, you’ll get your first taste of the local tipple, Cava, during a once in a lifetime “brindis de altura” or toast from above.

After landing you’ll be greeted by a support vehicle which will whisk you off to an exclusive lunch venue to sample classic cuisine of Rioja province.

An afternoon private visit and tasting to the very exclusive Remirez de Ganuza cellars, is a must. Dinner at the boutique Hotel Viura restaurant. Trendy, exquisite food and charming atmosphere.

En route to the Palace of the Count of Calheiros, (Paço de Calheiros), we suggest to call at Guimaraes, one of the most historical towns in Portugal, where you can enjoy a guided private visit to “the citadelle” or fortress and stroll the old town. Back en route to our destination, do stop for lunch in beautiful Ponte de Lima, an old city with deep historical roots, a few miles away from Paço de Calheiros, where the Count of Calheiros, a charming and very cultivated person will welcome you “at home”.

In the late afternoon/evening you can have a 2 hour Portuguese cooking lesson before you sit at the table headed by the count.

DAY 8. PAÇO DE CALHEIROS-CAMBADOS-PAZO DE BRANDESO, GALICIA, SPAIN (120 MILES)

We leave Portugal to enter Galicia, the most northwestern region of Spain, a land with very deep historical roots blessed by nature, the cradle of spirituality in the Iberian Peninsula, where the traditions and cult to the good life shows everywhere and the wine and food is a religion. The best fish and seafood in Europe arguably comes from Galicia, and you will be guided in accordance.

In the way to your destination at “Pazo de Brandeso”, you can call at Cambados and visit the famous winery Palacio de Fefiñanes, while tasting its acclaimed oysters, as an appetizer before lunch.

DAY 9. DAY AT LEISURE IN SANTIAGO DE COMPOSTELA

At merely half an hour drive from Paço de Brandeso, you will visit Santiago de Compostela (The Way), the capital city of Galicia, worldwide renown as a pilgrimage destination where the famous Camino de Santiago finishes.

Santiago is a monumental town with cobbled streets and bustling life, a result of its reputed university, the pilgrims and visitors from all over the world. Its gastronomy for all tastes is based on the fish and local seafood, delicious, and also an excellent meat dishes. Let us show you a city we are very familiar with, and we can advise you where to go, very interesting shopping included with high quality silverware. As alternative options we can organize for you to walk the last stage, a short walk of the Camino de Santiago to enter the famous Cathedral along with the pilgrims, a once in a lifetime experience.

A second option could be to visit Lugo, a walled town an hour drive from Paço de Brandeso. The wall was built by the romans in the 43rd Century, has been twinned with The Great Wall of China, and a walkway over the wall allows visitors to stroll along the entire length, nearly 2 miles. Gastronomy in Lugo is outstanding and private and unique activities will be arrange depending on weather, season...

En route to Santander, we´ll arrange lunch at a typical asturian restaurant in Cudillero, a cozy little fishing port where in addition to excellent fish and sea food served in a terrace of the lovely square, you can enjoy and taste the famous local rough cider, while listening to the native bagpipes, similar to Scotland. The way the cider is poured into the glass, is unique in the world and makes the visit an unforgettable cultural and gastronomic experience.

Upon arrival, rest of the evening at leisure in Santander. You will dine at private Club Maritimo accompanied by our dear local friends that will share with you the insight of the life in Santander and its historical links with the Americas.

DAY 11. SANTANDER AT LEISURE

Santander is the capital of , a region where mountains and sea meet up. A mix of breathtaking countryside and scenery.

Take a half a day sea cruise in one of the most spectacular harbors of Spain. Stroll the seaside and beaches promenade at El Sardinero area. The city offers a very select shopping for ladies.

The food is also excellent and its restaurants very well reputed. We will arrange for you to dine in El Puerto, or alternatively at La Posada, both a must.

In the way back to Madrid, you will experience a fantastic restaurant in Burgos, Landa Palace, with traditional Castilian cuisine in the grounds of an old manor house. September 2016 Here’s a photo of Jaume, our chef/teacher, in Barcelona. He was just the best! He’s such a nice fellow, did a terrific job, and shepherded us through the Boqueria, introducing us all along the way! I would recommend him to anyone! It was a delightful day. I do quite a bit of cooking so I feel pretty qualified to make that recommendation. We loved our hotels and restaurants! The driver for the large part of our journey, was super! Incredible!!! Disfrutar is incredible!! The three chefs from El Bulli are geniuses!! We could not believe that we could have a reservation!! Very playful, terrific sommelier, food is so imaginative!!
