Basic Information:

Oyster Mushrooms are edible mushrooms of Pleurotus spp. With a rich traditional history stretching back at least 3,000 years in Asian cultures, the Oyster Mushroom was seen as a culinary delight as much as a . In Traditional Chinese Medicine (TCM), this mushroom is prescribed for muscle, joint and tendon relaxation, to strengthen veins and increase kidney function.

According to mycological genius Paul Stamets, the Oyster Mushroom is “The Workhorse of Gourmet Fungi”. This is due to the fact it has been discovered that not only are they an exceptional ally to our health, these mushrooms have the seemingly unique ability to degrade environmental toxins, and especially hydro-carbon based contaminants. Their role as guardians of the biosphere is becoming clear as new research into their complex biochemistry proves their potential to combat hunger, improve immunity and clean up polluted lands.

Oyster mushrooms are a very versatile mushroom, and are an entire genus of mushroom called „pleurotus‟ as opposed to being one single type. This genus contains over 15 different edible species with colours ranging from pink (pleurotus djamour), yellow (pleurotus citrinopileatus), blue (pleurotus columbinus), brown and grey (pleurotus ostreatus). These mushrooms are relatively easy to grow, and can adapt to many different mediums, such as: cereal straw and grain, paper and cardboard, wood- chip, and even textiles. Because of this, that they are relatively easy to grow and harvest.

Nutritional Importance and Benefits:

Immune System Oyster Mushrooms contain complex carbohydrates made up of small sugar molecules known as polysaccharides, more specifically they contain certain polysaccharides, beta- D-glucans. These powerful compounds naturally boost the immune system by optimising its response to disease and infections. Over 150 years of research has found that beta glucans act as immunomodulator agents, meaning they trigger a cascade of events that help to regulate the immune system and make it more efficient.

Specifically, beta glucans stimulate the activity of macrophages - versatile immune cells that ingest and demolish invading pathogens and stimulate other immune cells to attack. Macrophages also release cytokines, chemicals that when secreted enable the immune cells to communicate with one another. In addition, beta glucans stimulate lethal white blood cells (lymphocytes) that bind to tumours or viruses, and release chemicals to destroy them.

Heart Health

Oyster Mushrooms have a natural cholesterol reducing effect similar to lovastatin, (a synthesized drug that treats patients with excessive blood cholesterol). These mushrooms have been widely studied for their effect on modulating blood cholesterol levels and evidence shows that Oyster Mushrooms have the ability to reduce triglycerides and LDL cholesterol.

It has also been found that Oyster Mushrooms contain erogothioneine, a lesser known antioxidant amino acid that protects the cells of the body, reducing triglycerides which can cause cardiovascular disease.

Basic Information:

White button mushrooms, botanically classified as Agaricus bisporus, are one of the most cultivated varieties in the world and are a widely used member of the Agaricaceae family. Also known as Table mushrooms, Common mushrooms, Champignon de Paris, and Cultivated mushrooms, White button mushrooms are a slightly different strain closely related to the cremini mushroom and the large portobello mushroom, with the only difference being predominately age and color. White button mushrooms are the youngest, followed by the cremini, and then the mature version being the portobello. White button mushrooms are commonly found in fields and grasslands all over the world, but they are also highly cultivated and varieties within the Agaricus bisporus account for about ninety percent of the mushrooms cultivated in the United States. White button mushrooms are favored by chefs and home cooks for their mild taste and versatility in a variety of culinary dishes.

About the product:

White button mushrooms are small to medium in size with caps averaging 2-7 centimeters in diameter and are attached to short, truncated stems. The smooth white caps are rounded, firm, and spongy. When bruised, the white flesh will turn light pink and will then transform into brown. Underneath the unopened caps, there are many

8 small, light brown gills that are hidden with a white veil and these gills produce dark brown spores. The short white stem is also edible, dense, thick, and smooth. When raw, White button mushrooms are mild with a crisp texture, and when cooked, they develop an earthy flavor with a tender, chewy texture.

Constituents: White button mushrooms contain some antioxidants, potassium, selenium, amino acids, vitamin D, riboflavin, phosphorus, zinc, folate, and manganese.

Culinary Uses:

White button mushrooms are best suited for both raw and cooked applications such as baking, roasting, sautéing, grilling, or stewing. They can also be used as a substitute in recipes that call for cremini mushrooms. White button mushrooms can be sliced raw and mixed into green and grain salads or sliced and served with dips. When cooked, they can be grilled on skewers, stuffed with crab, cheese, or other meats as a bite-sized appetizer, added into sauces, gravies, stir-fries, soups, stews, baked into tarts, or sliced as a topping on pizza. They can also be cooked with artichokes, chopped into ceviche, or baked into mushroom bread. White button mushrooms pair well with tomatoes, carrots, celery, potatoes, jalapenos, garlic, shallots, onion, ginger, fennel, kimchi, lime, sage, parsley, basil, meats such as beef, pork, or poultry, eggs, soy sauce, balsamic vinegar, marinara sauce, cream sauce, white wine, rice, orzo, mozzarella, parmesan, and pecorino romano cheese. They will keep up to a week when stored loosely in a paper bag or stored in a bowl covered with moist paper towels to prolong freshness in the refrigerator.

Button mushrooms are the most consumed mushrooms in the United States, accounting for 90 percent of mushroom intake according to the United States Department of Agriculture. Also referred to as white button mushrooms or commercial mushrooms, they are available year-round and are used in soups, salads, casseroles or eaten raw. A look into the health benefits of this widely consumed fungus may prompt you to add more to your diet.

Heart Health Benefits

Heart disease is a leading cause of death throughout the world, but consuming button mushrooms can keep you from becoming another statistic. A major risk factor for heart disease is atherogenesis, which is the formation of plaque on arterial walls, which causes atherosclerosis and hardening of the arteries. Researchers at Arizona State University tested the effects of button mushrooms on the human endothelial cells in a test tube. The results of their study, published in the July 2010 issue of "Nutrition Journal," show that button mushrooms reduce inflammation in arterial cells and prevent white blood cells from sticking to arterial walls. The researchers conclude that consuming button mushrooms may be a means to prevent heart disease.

Immune System Benefits

Specific cells in the body, referred to as natural killer cells, respond rapidly to foreign invaders such as viruses or cancer cells. Their rapid response is crucial to the immune system, as it helps the body fight disease. The June 2007 issue of the "Journal of Nutrition" reports that eating button mushrooms can boost the immune system by increasing the activity of natural killer cells. Although they do not fully understand how, scientists believe that it is the polysaccharide content of the mushrooms that is responsible for their immune-boosting ability.

Anticancer Benefits

Button mushrooms protect the body from various cancer cell lines. In June 2010, the department of plant pathology at Penn State released a report stating that button

10 mushrooms have been found effective at treating breast, colon and prostate cancers. According to a study in the December 2006 issue of "Cancer Research," eating one 1/2 cup of button mushrooms a day can stop the growth of breast cancer tumors. A healthy woman may eat less than 1/2 cup to greatly reduce the risk of developing breast cancer.

Nutritional Benefits

Button mushrooms contribute to the recommended daily intake of several vitamins and minerals. The USDA reports that mushrooms contain high amounts of copper, which is needed to produce blood cells and maintain heart health. Additional nutrients are vitamins C, D and B; and the minerals selenium, iron, magnesium, phosphorous, potassium and zinc. 12 Reishi Mushrooms

Basic Information:

The reishi mushroom, also known as Ganoderma lucidum and , is a fungus that grows in various hot and humid locations in Asia.

For many years, this fungus has been a staple in Eastern medicine.

Within the mushroom, there are several molecules, including triterpenoids, polysaccharides and peptidoglycans that may be responsible for its health effects.

While the mushrooms themselves can be eaten fresh, it is also common to use powdered forms of the mushroom or extracts that contain these specific molecules.

About the product:

Reishi mushroom is a fungus. Some people describe it as "tough" and "woody" with a bitter taste. The above-ground part and portions of the below-ground parts are used as medicine.

Reishi mushroom is used for cancer, aging, boosting the immune system to prevent or treat infections, and for many other reasons, but there is no good scientific evidence to support these uses.

13 In combination with other herbs, reishi mushroom is used to treat prostate cancer. Also in combination with other ingredients, reishi mushroom may be used for viruses, such as the human papilloma virus (HPV), genital herpes, and cold sores.

Types of Mushrooms:

 Ganoderma lucidum – Is the species used in traditional Chinese medicine. It grows on hardwood (especially oaks) in warmer regions, such as Asia, the south Pacific, southern Europe and the Southeastern United States.

 Ganoderma tsugae – Found in the Northeastern United States, the species name “tsugae” means “hemlock tree” which tells you where you should begin looking for this species. Though it‟s almost always found on hemlock, it can occasionally be found on birch or maple if they were growing close to hemlock. They can be found freshest between May and July. This species is also known as hemlock varnish shelf.

 Ganoderma applanatum – A particularly hard and woody reishi species, varying in size from 2 to 30 inches wide. Color is duller than others and lacks a lustrous shine. Very difficult to cut, and often must be cut with a saw into strips for drying. This species is an opportunist and can be found on many different tree species, both hard and soft wood.

 Ganoderma curtisii – Distributed from Massachusetts to Nebraska, this species has an especially dramatic ochre colored cap, that dulls as the mushroom ages. It has a matte rather than lacquered finish on its cap. Found on hardwood logs, usually oak or maple, but occasionally other hardwoods as well.

 Ganoderma sessile – A red shiny species that grows 3 to 16 inches across. The flesh is very soft and bendable, and unlike other species, if damaged the outer growth margin will produce a sap like resin. Found on hardwood, usually oak or maple, but occasionally other hardwoods as well.

14  Ganoderma oregonense – As its name suggests, this species is native to the pacific northwest where it grows on conifers. The fruiting body is very large and can be up to a meter across.

Nutritional Importance and Benefits:

 Alzheimer's disease. Early research shows that taking reishi mushroom powder does not improve memory or quality of life in people with Alzheimer's disease.

 Enlarged prostate (benign prostatic hyperplasia; BPH). Men with enlarged prostates often have urinary symptoms. Taking reishi mushroom extract can improve some urinary symptoms such as the need to urinate often or immediately. But other symptoms such as urine flow rate don't seem to improve. Also it's not clear if reishi mushroom improves urinary symptoms in men with enlarged prostates. It might only improve urinary symptoms caused by other conditions.

 Cancer-related tiredness. Early research shows that taking reishi mushroom powder reduces tiredness in people with breast cancer.

 Noncancerous tumors in the colon and rectum (colorectal adenomas). Early research shows that taking reishi mushroom extract can reduce the number and size of these tumors.

15  Clogged arteries. Early research shows that taking reishi mushroom extract (Ganopoly) reduces chest pain and shortness of breath in people with clogged arteries.  Diabetes. Most research shows that taking reishi mushroom extract doesn't improve blood sugar control in people with diabetes. But most of these studies were small, and some conflicting results exist.

 Genital herpes. Early research shows that taking a mixture of reishi mushroom and other ingredients helps reduces the time needed for herpes outbreaks to heal.

 Hepatitis B. Early research shows that taking reishi mushroom (Ganopoly) reduces how much of the hepatitis B virus is in the body. This product also seems to improve liver function in people with this condition.  Cold sores. Early research shows that taking a mixture of reishi mushroom and other ingredients reduces the time needed for cold sores to heal.  HPV (Human papilloma virus). Early research shows that taking a combination of reishi mushroom and coriolus mushroom reduces amounts of HPV virus in the mouth.

 High blood pressure. The effect of reishi mushroom on blood pressure is conflicting. Taking reishi mushroom doesn't seem to lower blood pressure in people with only slightly high blood pressure. But it seems to lower blood pressure in people with more severe high blood pressure.

 Lung cancer. Early research shows that taking reishi mushroom does not shrink lung tumors. but it seems to improve immune function and quality of life in people with lung cancer.  Shingles-related pain. Some people report that hot water extracts of reishi mushroom decreases pain when conventional treatment does not work.

 Altitude sickness.

 Asthma and bronchitis.  Boosting the immune system.

 Chronic fatigue syndrome (CFS).  Fatigue.

 HIV disease.

Basic Information:

Shiitake are edible mushrooms native to East Asia.

They're tan to dark brown, with caps that grow between 2 and 4 inches (5 and 10 cm).

While typically eaten like vegetables, shiitake are fungi that grow naturally on decaying hardwood trees.

Around 83% of shiitake are grown in Japan, although the United States, Canada, Singapore, and China also produce them.

You can find them fresh, dried, or in various dietary supplements.

The word “shiitake” is derived from the Japanese words "shii," the oak-like tree where these mushrooms first grew, and "také," which simply means mushroom; hence, it literally means “mushrooms of the shii tree.”1

Dried shiitake have an umami flavor that‟s even more intense than when fresh.

Umami flavor can be described as savory or meaty. It‟s often considered the fifth taste, alongside sweet, sour, bitter, and salty.

Both dried and fresh shiitake mushrooms are used in stir-fries, soups, stews, and other dishes.

Shiitake mushrooms are biologically different from plant- and animal-derived foods, so it‟s no surprise that they have a unique nutritional profile.They‟re a good source of copper,one of the few metallic elements essential for maintaining normal metabolic processes and a healthy cardiovascular system.

They‟re also rich in pantothenic acid and selenium, providing 21 milligrams (mg) and 46 micrograms (mcg), respectively.Pantothenic acid is a water-soluble B vitamin that plays a role in the synthesis of coenzyme A and acyl carrier protein, both of which are necessary for fatty acid synthesis and degradation. 22 Cordyceps Mushrooms

Basic Information:

Cordyceps militaris is a species of fungus in the family Clavicipitaceae, and the type species of the genus Cordyceps. It was originally described by Carl Linnaeus in 1753 as Clavaria militaris.

Cordyceps militaris is a potential harbour of bio-metabolites for herbal drugs and evidences are available about its applications for revitalization of various systems of the body from ancient times. Amongst all the species, C. militaris is considered as the oldest source of some useful chemical constituents. Besides their popular applications for tonic medicine by the all stairs of the community, the constituents of C. militaris are now used extensively in modern systems of medicine.

About the product:

Cordyceps is a fungus that lives on certain caterpillars in the high mountain regions of China. Natural cordyceps is hard to get and may be expensive. Most supplements are made with cordyceps grown in a laboratory.

Cordyceps is most commonly used for kidney disorders and male sexual problems. It is

23 also used after a kidney transplant. It is also used for liver problems, improving athletic performance, and many other conditions

Constituents: The constituents of medicinal mushroom Cordyceps militaris, especially the anti-cancer agent cordycepin (3′-deoxyadenosine).

Nutritional Importance and Benefits:

 Athletic performance. Several studies have shown that taking cordyceps or a combination of cordyceps and roseroot does not improve endurance in trained male cyclists.

 Kidney injury caused by certain antibiotics (aminoglycoside nephrotoxicity). Early research shows that using cordyceps with the drug amikacin might reduce kidney damage caused by the drug in older people.  Asthma. Early research suggests that taking cordyceps alone can reduce asthma symptoms in adults. However, other early research shows that taking cordyceps along with other herbs for 6 months does not reduce the need for medication or improve asthma symptoms in children.  Long-term kidney disease (chronic kidney disease or CKD). Early research shows that taking cordyceps along with standard therapy for chronic kidney disease may improve kidney function. However, most of these studies are low quality and were conducted for only 6 months or less.

 Kidney damage caused by contrast dyes (contrast induced nephropathy). Some early research shows that taking cordyceps while undergoing an exam using contrast dye reduces the chance of kidney damage caused by the dye. But other early research shows no benefit.

24  Kidney damage caused by the drug cyclosporine.There is early evidence that taking cordyceps with cyclosporine can reduce kidney damage caused by cyclosporine in people with kidney transplants.  Swelling (inflammation) of the liver caused by the hepatitis B virus (hepatitis B). Early evidence shows that taking cordyceps by mouth might improve liver function in people with hepatitis B. However, cordyceps seems to be less effective than the supplements astragalus and fo-ti.  Kidney transplant. Early research shows that taking cordyceps with low-dose cyclosporine can improve 1-year survival, prevent transplant rejection, and reduce the risk of infection similar to taking standard dose cyclosporine in people who received a kidney transplant. Also, cordyceps seems to improve kidney transplant survival, kidney transplant rejection, and infection similar to azathioprine when taken with medications to prevent organ rejection. It might also reduce the risk of long-term impaired kidney function called chronic allograft nephropathy, which is the leading cause of kidney transplant failure.  Sexual problems that prevent satisfaction during sexual activity. Early research shows that taking a specific cordyceps product (CordyMax Cs-4) daily for 40 days might improve sex drive in people with low sex drive.

Basic Information:

Lion's mane mushrooms () are white, globe-shaped fungi that have long, shaggy spines. People can eat them or take them in the form of supplements. Research suggests that they may offer a range of health benefits, including reduced inflammation and improved cognitive and heart health.

About the product:

Lion‟s mane mushroom (Hericium erinaceus), also known as hedgehog mushroom, has been used for centuries in traditional Chinese medicine and as a food in Asia. In China, it is known as hou tou gu, and in Japan as yamabushitake. The mushroom has a distinctive appearance, with what appears to be a large mass of long tendrils similar to a shaggy lion‟s mane. (The entire length of each tendril is attached to the mushroom‟s body.) Other names for this mushroom may refer to its similar shape or appearance to a pom pom or a monkey‟s head.

Lion‟s mane mushroom is white in color when fresh, but turns a rusty brown or creamy color when dried. In culinary use, it‟s sometimes compared to lobster or crab in taste and texture, with a mild sweetness.1,2 The mushroom is commercially grown on oak logs, miller‟s bran, beech sawdust, and soybean substrates.3

Anxiety and depression

Extracts from lion's mane mushrooms may be beneficial in the treatment of anxiety and depression.

In a 2015 study, mice that consumed lion's mane mushroom extract displayed fewer depressive behaviors and had blood markers that indicated lower depression. The researchers suggest that this is due to the extract's anti-inflammatory effects.

The findings of a 2018 animal study support this, with the authors concluding that these mushroom extracts may contain agents that are useful for treating depressive disorders.

In a small Japanese study, women with a variety of health complaints, including menopausal symptoms and poor sleep quality, ate cookies containing lion's mane extracts or placebo cookies for 4 weeks. The participants who ate the extract reported lower levels of irritation and anxiety than those in the placebo group.

Cognitive health

It is possible that lion's mane mushrooms might boost cognitive function, but the existing research is mainly on animals.

In one study, lion's mane dietary supplements appeared to give mice better object recognition and recognition memory.

Heart health

Lion's mane extract may improve heart health, but the research to date has primarily used animal subjects.

Cancer

The antioxidant properties of lion's mane mushrooms may play a role in cancer prevention or treatment.

The results of an in vitro study indicate that lion's mane extracts have therapeutic potential against human leukemia.

A study using animal models found that these mushroom extracts may also fight liver, colon, and gastric cancer cells.

These findings are promising, but it is not currently possible to confirm that the same effects will apply in people.

Diabetes

Controlling blood sugar levels is key to managing diabetes. In one study, blood sugar levels in rats with diabetes were lower after they received lion's mane mushroom extract for 4 weeks.

One of the complications of diabetes is nerve damage resulting from prolonged periods of high blood sugar. A 2015 study on rats, in which they ingested lion's mane extract for 6 weeks, showed positive results, including lower blood sugar levels, reduced feelings of nerve pain, and improved antioxidant activity.

Digestive health

Lion's mane may help digestive health by fighting inflammation, which could be beneficial for people with inflammatory bowel disease (IBD). The mushroom may also boost immune function and encourage the growth of good bacteria in the gut.

30 In vitro studies report that lion's mane mushrooms can result in antibacterial activity that may improve digestion. Research in mice supports these findings by showing that extracts of lion's mane may protect against stomach ulcers.

Wound healing

Extracts from lion's mane mushrooms may provide healing benefits for skin wounds.

A study on rats with neck wounds found that topical application of lion's mane extract led to faster healing.

However, more extensive research is necessary for the medical community to recommend lion's mane mushrooms for topical use on humans.

Nervous system recovery

Damage to the nervous system can have significant effects on health.

Some research suggests that extracts of lion's mane mushrooms may encourage nerve cells to grow and repair more quickly.

One study showed that rats with nerve damage receiving a daily extract of lion's mane mushrooms had quicker nerve regeneration than control animals.

Other researchers have concluded that the mushrooms may have the potential to treat or prevent diseases that cause a decline in cognitive health, such as Parkinson's disease and Alzheimer's disease.

However, there is currently a lack of research on the effects of lion's mane mushrooms in humans with Alzheimer's disease.

An older Japanese study on adults aged between 50 and 80 years with mild cognitive impairment found that daily consumption of mushroom extract for 16 weeks led to

Basic Information:

Morels feature brown, spongy, honeycomb-patterned conical caps, and long, hollow, light color stem completely attached to the cap. There are several sub-species of Morchella mushrooms grown in the wild. Out of which black morels, brown and yellow morels are typically foraged in the forest. Morels grow in fertile organic, moist, and sandy soil. Completely developed morel mushroom measures about 6 inches in height. In the subarctic coniferous forests, they typically foraged during the spring season in the woods wildfire areas burnt during the preceding summer. In the hardwood forests, they found in abundance around the base of elm, ash, aspen, cottonwood, and oak trees.

About the product:

Morchella, the true morels, is a genus of edible sac fungi closely related to anatomically simpler cup fungi in the order Pezizales. These distinctive fungi have a honeycomb appearance due to the network of ridges with pits composing their caps. Morels are prized by gourmet cooks, particularly in French cuisine.

Morel's health benefits were attributed mainly to polysaccharides as the active compounds, and to various phytochemicals, mainly phenolic compounds, tocopherols, ascorbic acid and vitamin D.

Culinary Uses:

The fresh morels are one of the most sought after mushrooms, especially in the French cuisine. Always eat morels cooked since eating raw morels could cause stomach upset. Being a field mushroom, morels gather sand and grit in their pits and needs cleaning. Soak them in cold salted water for few minutes and strain and again rinse in cold normal water for few seconds to remove the salty taste. Only those morels intended to use in cooking should be treated with this method.

Morels retain their flavor even after dying. Dry morels should be reconstituted by soaking them in lukewarm water for 20 minutes. Soaking swells them up, regaining their original conical shape. Dry mop using a paper towel. Slice lengthwise or quarterly as you may desire in cooking.

Here are some serving tips:

 Morels can be stewed, braised or cooked in main dishes meat like rice, poultry, game, and fish.  Traditionally, morel mushrooms enjoyed pan fried in butter and garlic cloves, with addition of some salt and pepper.

 Slices of morel can be added to soups.

 Fine sliced, diced morel can also be used as add ons in pizza, pasta, risotto, etc.

1. Morels, fresh or dried, are low calorie mushrooms. 100 grams carry about 31 calories. Nonetheless, they endowed with superb levels of health benefiting antioxidants, essential minerals and vitamins. 2. Morels carry the highest amount of vitamin-D among the edible mushrooms. 206 IU or 34% daily required levels of vitamin-D in 100 grams of raw morels, mostly in the form of ergocalciferol (vit.D-2). Zinc is essential nutrient that plays a vital role in cellular metaboilsm, mucosal regeneration, immune function, and reproductive organ growth. 7.
