Pinot Noir

Pinot Noir is the name derived from the French words for “pine” and “black”. This alludes to the varietals’ clustered dark purple pine cone shaped bunches of fruit. A great Pinot Noir creates a lasting impression on the palate and in the memory. Its aroma is often one of the complexes of all varietals and can be intense. With ripe grape or black cherry aromas, frequently accented by pronounced spiciness that suggests cinnamon, sassafras or mint. Ripe tomato, mushroom, and barnyard smells are common descriptors for identifying Pinot Noir. It is full bodied and rich but not heavy with substantial flavour despite its delicacy. The most appealing quality of Pinot Noir may be its soft, velvety texture. When right, it is like liquid silk, gently caressing the palate.

Cabernet Sauvignon

Cabernet Sauvignon is one of the world’s most widely recognized red grape varieties. In cool regions, the wine is herbaceous and show flavours of green peppers. In regions where the grape is exposed to excess warmth and over-ripening, there is a propensity for the wine to develop flavours of mint, eucalyptus and cooked or stewed blackcurrants. Cabernet Sauvignon with pronounce green pepper flavours earned the nickname of “Monterey Veggies”. In parts of Australia, the grape develops more mineral flavours. Resinous Eucalyptus flavours tend to appear in regions that are habitats for the eucalyptus tree.
