Christmas Pudding 1111812018 Tradftlon ofChristrnas cakes and puddings Tradition of Christmas cakes and puddings The origins of Christmas are found in festivities with an abundance of meals" ln the earlier years, as soon as the weather got cold, pigs, calves and poultry were carved up into different cuts of meat. Fillets, cutlets, hams and pigs' knuckles and trotters, together with cheeses, were buried in the snow or stored in the root cellar, a sort of cold roorn. Some meats were pickled in stoneware jars, some were smoked. This was not only for winter, this was early preparation for the Christmas festivities. One of the oldest Christmas dishes known is mince pie, which originated in the Middle Ages. The orlginal recipe contained a mixture of finely chopped poultry, pheasant, partridge and rabbit. Later, sugar, apples, raisins and candied oranges and lemons were added. Over time, the meats were eliminated leaving only the sweet ingredients, introducing the "traditional" Christmas pudding. The traditional Christmas plum pudding Fruit cake, stollen and log cake are part of the Christmas tradition, served on Christmas eve or offered as gifts. The famous, typically English Christmas pudding was called a "hackin" from its many ingredients. By the 17th Century, when more sweets were added, it became the plum pudding, often prepared on Christmas mcrning, and sprinkled with brandy and flarned when served. The traditional Ghristmas fruit cake is a derivative of the Christmas pudding. lt includes raisins, dates, nuts and candied fruit, also forgetting the generous helping of brandy or rum. https:/ldidyouknow.org/christmas/cakes/ 1t2.

Bulletin avayii&tft©: "Aunt Sammy's Eadio Recipes." **# This morning, while I was thinking about roast turkey dinners, and what a lot of work it is to prepare holiday meal s, I was reminded of the big feasts which were served in the days of old, when knights and lords and ladies lived in merrie England, Do you know that they used to celebrate Christmas for two weeks, or more? The biggest feaSt of all came on Christmas day, when the feudal chieftain enter- tained all his friends. The boar's head was the main dish on the menu. All £ the "best people" served a boar's head at Christmas time. It was always carried to the banqueting hall on a gold or silver platter, by a special servant, amid the flourish of trumpets, and strains of minstrelsy. Next in importance to the boar's head was a peacock. The skin and feathers were first carefully removed, and the peacock was roasted. When it was done, the bird was sewed up again in all its gorgeous plumage, its beak was gilded, and itvasi/sent to the table. Only noble hands could serve this splendid dish. It was brought into the dining hall by the most distinguished and beautiful. • lady guest. She was followed by the rest of the ladies, and they entered the hall to the sounds of music. The dish was placed before the master of the house, or his most honored guest, who, no doubt, was'/ skillful with the carving knife, as he was with, the lance,' in joust or tournament.
