Cook Georgia Grown: Georgia Greens and White Bean Soup

Yield: 4-6 servings 1 tsp. dried oregano 1 1 /4- /2 tsp. crushed red pepper Ingredients: 1 Tbsp. fresh lemon juice

1 /4 cup olive oil Directions: 1 cup diced onion 5-6 cloves minced garlic Heat olive oil in a medium pot. 3 Tbsps. tomato paste Add onions and garlic to pot. Cook 8 cups sliced mixed greens, stems over medium heat until onions are removed and cut in thin shreds translucent.
