TOURISM: HISTORY IN THREE PROJECTS INDUSTRY OF HOSPITALITY

Numerous ratings in the field of tourism and hospitality have placed the Yaroslavl Region very high on the tourist potential scale. Back in 2010 Yaroslavl was among the first regions in the country to have worked out a tourism development regional target program. The program provides for a maximal active enticement of private investments into the tourism industry and complex development of the territory based on the principles of a joint government-private sector partnership. Possibly, the projects such as ‘Zolotoye koltso’ resort, ‘Yaroslavskoye vzmorye’ and historic-cultural complex ‘Vyatskoye’ would be the most colourful examples of the implementation of the tourism development regional program.

В 2012 году автор проекта реконструкции Вятского Олег Жаров получил от президента Государственную премию «За вклад в возрож- дение и развитие традиционных культурных и исторических ценностей». Во время награжде- ния особо было отмечено, что проект возрож- дения села лауреат реализовывает без помощи государства. Только за первые 3 года работы в «Вятское» было инвестировано 247 млн. рублей. Останавливаться на достигнутом бизнесмен не намерен. Развитие масштабного проекта и увеличение турпотока он связывает с расши- рением культурно-исторического комплекса по всей территории Некрасовского левобережья. Вслед за Жаровым сюда потянулись и другие инвесторы. Группа компаний Tashir активно ведет реставрацию архитектурной жемчужи- ны Ярославской области – дома купца первой гильдии, «паточного короля России» Никиты Понизовкина.

Открытие комплекса с рабочим названием «Понизовкино» планируется на 2014 год. Только за один год объем частных инвестиций в проект составил более 150 млн. рублей. В дальнейшем планируется включить в проект и литературный музей «Абакумцево» – филиал Государственного музея-заповедника Н.А. Некра- сова в деревнях Грешнево и Абакумцево, а также Мемориальный дом-музей скульптора А.М. Опеку- шина в деревне Рыбницы. Сейчас они находятся в областной собственности. В целом пример «Вятского» наглядно демон- стрирует возможность развивать новые туристиче- ские направления, возрождая культурно-историче- ское наследие. Кроме того, в России формируется новый структурный рынок – исторической недви- жимости. Потенциал его огромен: в стране лежат в руинах десятки тысяч памятников архитектуры. Передача их в частные руки и последующая рестав- рация, с одной стороны, освободит государство от бюджетного финансирования, с другой – наполнит их новым функциональным значением.

Even the President of RF shares his confident views. In 2012 the author of the Vyatskoye reconstruction project Oleg Zharov received a National award from the president ‘For contribution to the revival and development of traditional cultural and historical values’. During the award ceremony it was particularly noted that the laureate is implementing the village revival project wihtout any help from the government. Only in the first three years of work on ‘Vyatskoye’ 247 million roubles were invested. The businessman has no intention of stopping at what he has achieved. He suggests that the development of a large-scale project and increase in incoming tourists may be facilitated by an expansion of the cultural-historical complex across the whole of the Nekrasovskoye levoberezhye territory. The Tashir group is actively carrying out refurbishment of Yaroslavl Region’s architectural gem – the house of a merchant of the first guild, ‘The treacle king of Russia’ Nikita Ponizovkin. The launch of the ‘Ponizovkino’ complex is scheduled to take place in 2014. In just one year the volume of private investments into the project came up to over 150 million roubles. It is further planned to include into the project the ‘Abakumtsevo’ museum of literature – a branch of the N.A. Nekrasov National museum-sanctuary in the Greshnevo and Abakumtsevo villages, as well as the Memorial home-museum of the sculptor A.M. Opekushin in the Rybnitsa village. At present they are owned by the regional government. In general, the example of ‘Vyatskoye’ demonstrates the possibility of developing new tourist directions, while reviving cultural-historic heritage. Apart from that, a new structural market – that of historical real estate – is being formed in Russia. Its potential is enormous: tens of thousands of monuments of architecture across the country are lying in ruins. Transferring these to private enterprises, which would take care of their restoration, will one the one hand free the goverment from the budget financing obligations, on the other hand it would give them new functional meaning.

Русская кухня всегда славилась своими кушаньями. В каждом уголке страны были свои национальные рецепты, которые передавались из поколения в поколение. РОСТОВ

Ростов Великий издавна славился красивым и загадочным озером Неро. Неслучайно именно этот город считается родиной Емели и вол- шебной Щуки – персонажей одной из самых известных русских сказок. С давних времен главным блюдом всех ростовчан была уха. Варилась она из трех видов рыбы: обязательно щуки, а также из пескарей и мелкой плотвички. Главные особенности ростовской ухи – в простоте приготовле- ния: лук в блюдо кладут не резанным, а целым, в рыбный бульон добавля- ется укроп и подсолнечное масло. Уха на стол подается холодной, а щука (предварительно вынутая из бульона) очищается от костей и порционно раскладывается по тарелкам. Среди напитков, издревле почитаемых в Ростове Великом, – мед и цикорий. Мед варили из вишни, малины, причем в некоторых рецептах использовалась даже хвоя. А вот цикорий ростовчане пили как кофе: из перетертого корня растения готовили порошок, а затем растворяли его в воде. Натуральный энергетик и никакой химии!

СЕЛО ВЯТСКОЕ ДАНИЛОВСКОГО УЕЗДА

Село Вятское с давних пор знаменито своими вкуснейшими огурцами. Когда-то его называли огуречной столицей России. Произрастали огур- цы в Вятском в таком количестве, что в XVIII веке стоимость тысячи штук огурцов равнялась целому рублю. «Вятские – огурцы хватские» (хрустя- щие, ядреные) доставлялись солеными даже к царскому столу и в качестве деликатеса экспортировались за границу. В 1906 году на продажу в Москву и Петербург, а также в Швецию, Швейцарию и Данию из Вятского вывезли 8 млн. килограммов соленых огурцов, правда, с учетом веса тары. Рецепт соленых вятских огурчиков был достаточно прост: «дикие» огур- цы (выращенные просто в полях, без поливки и ухода) складывали в огром- ные бочки, заливали соленым рассолом, закрывали и поздней осенью опускали в местную речку Ухтомку. По весне бочки вынимали – огурчики были готовы. Местные жители уверяют, что секрет особых вятских огурцов – в уникальной родниковой воде, которая используется при засолке. 19 августа, на праздник Преображения, в Вятском до сих пор празднуют День огурца – в честь главного гастрономического сельского бренда.

ПОШЕХОНЬЕ

Помимо всеми известного пошехонского сыра и пошехонской ухи, жители Пошехонья готовили еще и свой «фирменный» напиток под назва- нием «Душепарка». «Душепарка» представляла собой слабоалкогольную настойку, сделанную на основе натуральных соков брусники и клюквы (со- бранной в дремучих пошехонских лесах) с добавлением меда. Напиток обязательно подавался теплым, и, как рассказывают местные жители, он по-особенному, согревающе, действовал на организм, придавая небыва- лое спокойствие.

Russian cuisine was always famous for its dishes. Every corner of the country had its own “national” recipes, which were passed down through the generations. Special dishes existed in the Yaroslavl Region – the history of their development is tied up with the geographical location of the region and with the special relationship the locals had with their food.

ROSTOV

The Great Rostov has long been famous for its beautiful and mysterious lake Nero. It’s no chance that this town is considered the birthplace of Emelya and the magical pike – the characters of one of the most well-known Russian fairytales. Since long ago, the main dish of all the Rostovites was ukha. It was cooked out of three types of fish: always pike, as well as minnows and small roaches. The main feature of the Rostov ukha is its simple preparation: the onion is put into the dish whole and not sliced, then dill and sunflower oil is added to the fish broth. The ukha is served cold, while the pike (previously taken out of the broth) has its bones removed and is then plated up. Among the drinks that have always been favored in the Great Rostov are mead and chicory drink. The mead was made from cherry, raspberry, and some recipes even used fir needles. While Rostovites drank the chicory like coffee: they made a powder from the ground root and then dissolved it in water. A natural energy drink and nothing artificial!

VYATSKOE VILLAGE, DANILOVSKY COUNTY

The Vyatskoe village has been knownfor a long time for its delicious cucumbers. It was once called the cucumber capital of Russia. In spring, the barrels were lifted up as the cucumbers were ready. The locals swear that the secret of the special Vyatskoe cucumbers is in the unique spring water, which is used for pickling. On the 19th of August, during the Feast of Transfiguration, the people of Vyatskoe still celebrate the Day of the Cucumber, in honor of the main rural gastronomic brand.

POSHEKHONYE

Apart from the world renowned Poshekhonye cheese and ukha, the citizens of Poshekhonye also made their “brand” drink called “Dusheparka”. “Dusheparka” was a weak alcoholic infusion, made from the juices of cowberry and cranberry (gathered in the dense Poshekhyin forests), with the addition of honey. The drink was always served warm, and according to the local people, it acted on the body in a special, warming manner, bringing incredible tranquility.

Самый знаменитый в ярославской губернии пивной завод был построен в 1878 году за речкой Чере- мухой купцом Иваном Дурдиным. Пивной завод получил название «Богемия». Ассортимент отличался разнообразием: пиво «Столовое», «Богемское», «Пильзенское». С 1910 года на рыбинском пивзаводе начали выпускать без- алкогольный напиток «Ситро».

УГЛИЧ

Самым известным гастрономическим брендом города до революции была угличская колбаса. Широкое распространение колбасы на Руси получили благодаря Петру I. В 1709 году царь выписал из Германии колбасных дел мас- теров, чтобы те научили русский народ готовить такие же «заморские» кушания. Так получилось, что практически все ученики, перенимавшие немецкую науку, оказались жителями Углича. Быстро освоив тонкости производства, угличане превзошли своих наставников и по рецептам, и по организации технологического процесса. Родоначальником практически всех оте- чественных колбас специалисты считают прасола Русинова – изобретателя «углицко- го». В 1860 году в самом Угличе было от - крыто 5 колбасных заведений. К 1866 году из всех 74 колбасных производств российской столицы 50 принадлежали угличским масте- рам. А вскоре начались поставки российской колбасы за границу. Существует версия, что и известная пого- ворка «катись колбаской по Малой Спасской» родом из Углича. Ведь дом купца Постнова с колбасным магазином находился как раз на Спасской улице. Говорят, эта знаменитая колбаса и сегодня производится по старинным рецептам – правда, уже не в Угличе, а в Москве. Стоит колбаса баснословных денег и в свобод- ной продаже не появляется. Поговаривают, что попробовать ее можно только на президентских приемах в Кремле. 

UGLICH

The most famous gastronomic town brand before the revolution was the Uglich sausage. Sausage became widespread in Russia thanks to Peter the Great. In 1709, the Tsar invited to Russia sausage making experts from Germany, so that they would teach the Russian people how to make these “foreign” dishes. It just so happened that almost all the students, who learned the German culinary science, were citizens of Uglich. Having quickly mastered the manufacturing details, the people of Uglich surpassed their teachers both with the recipes and the production process. Specialists consider the father of almost all domestic sausages to be the cattle dealer Rusinov, the inventor of “Uglitskiy”. In 1860, five sausage shops opened up in Uglich itself. In 1866, out of the 74 sausage manufacturing plants in the Russian capital, 50 belonged to specialists from Uglich. Soon after, sausage began to be exported overseas. There is a theory that the famous saying “roll like a little sausage down Malaya Spasskaya” comes from Uglich. For the house of merchant Postnov with his sausage shop was located right on Spasskaya Street. It is said that even today this famous sausage is made according to the old recipes – but nowadays in Moscow, not in Uglich. The sausage costs a fortune and isn’t available in the normal shops. It is said that one can only try it at presidential functions in the Kremlin.

Огромной популярностью у ярославцев пользовались романовские (ранее город Тутаев носил имя Романово-Борисоглебск) баранки – изобретение местных умельцев-пекарей. Баранки пеклись из заварного теста в виде удлиненного кольца и продавались обычно во время ярмарок. Выпекались романовские баранки из лучшей пшеничной муки, при этом

Этот маркетинговый ход давал отличные ре- зультаты: у крестьянских детей ярославской губернии баранки были главным лакомством, и родители покупали их для своей ребятни в качестве гостинца.

КАРАБИХА

Маленький район Ярославской области из- вестен жителем нашего края благодаря «некра- совским щам». Щи готовила супруга известного русского писателя Николая Некрасова и уго- щала ими гостей. «Некрасовские щи» варились без мяса, на грибном бульоне. Причем грибы обязательно должны были быть белые. Щи подавались холодными, с добавлением густой сметаны. Еще одно блюдо, которое стали готовить в Карабихе после посещения ярославской усадьбы любителем кулинарии Александром Дюма, – это гречневое ризотто. Для его приготовления использовали гречку, лук-порей, сыр-пармезан, грибы, сливочное масло и белое вино. Все это в определенной последовательности тушилось и помещалось в горшочки. Блюдо посыпалось пармезаном и обязательно подавалось горячим. Среди гостей усадьбы гречневое ризотто поль- зовалось небывалой популярностью. Так что га- строномические последствия визита Александра Дюма оказались для жителей ярославской губер- нии не менее значимыми, чем литературные.

ЯРОСЛАВЛЬ

В Ярославле в праздничные дни в домах состоятельных горожан готовили особую мясную похлебку, которая подавалась к столу с пресной лепешкой. «Ярославская похлебка» готовилась из мяса трех сортов (говядина, свинина и баранина), с добавлением мелко порезанных овощей: картошки, лука, морко- ви и томатов. К столу похлебка обязательно подавалась горячей, с посыпанной зеленью пресной лепешкой.

TUTAEV INDUSTRY OF HOSPITALITY Incredibly popular among the people of Yaroslavl are the Romanov (the town Tutaev was previously called Romanovo-Borisoglebsk) bagels, the invention of the local craftsmen, the bakers. The bagels were made out of choux pastry, in the shape of an elongated ring, and were usually sold at fairs. The Romanov bagels were made out of the best wheat flour and yet they cost a measly amount. Such was the bakers’ approach to business: the cheaper the product, the more buyers there are. This marketing move produced great results: the bagels were a favorite treat of the pheasant children in the Yaroslavl province and parents bought them for their children as presents.

KARABIKHA

The small region of the Yaroslavl province is well-known to our citizens thanks to the “Nekrasov cabbage soup”. The wife of the famous Russian writer Nikolai Nekrasov cooked the cabbage soup and served it to their guests. The “Nekrasov cabbage soup” was cooked without meat, with a mushroom broth as a base. The mushrooms had to be white ones. The soup was served cold, with thick sour cream added to it. Another dish that became widespread in Karabikha after a Yaroslavl manor was visited by the culinary enthusiast Alexander Dumas is the buckwheat risotto. Buckwheat was used for its preparation, as well as leeks, Parmesan cheese, mushrooms, butter and white wine. Each ingredient was stewed in particular order and then placed in small pots. The dish was sprinkled with Parmesan cheese and was always served hot. The buckwheat risotto was incredibly popular among the manor guests. So the gastronomical results of Alexander Dumas’ visit were as important to the residents of the Yaroslavl province as his literary results.

YAROSLAVL

During festive days in Yaroslavl, a special meat broth was prepared in the houses of affluent townspeople, which was served with flat bread. The “Yaroslavl broth” was made out of three types of meat (beef, pork and lamb), with the addition of finely chopped vegetables: potatoes, onions, carrots and tomatoes. It was served hot, together with flat bread that was sprinkled with herbs.
