Subject: EU POULTRY AUDIT

In preparation for the audit of the USDA/FSIS poultry inspection system the plants directly involved in the audit need to review the following information; FSIS Export Requirements for the European Union http://www.fsis.usda.gov/OFO/export/euroregs.htm Sections V, VI, VII, XI, and XII are not applicable

Section I----see A, 3, 4, 5, 6, 7, 9, 12 and B 1 Section II---A and B---same as FSIS C---no wood pallets in exposed product areas, and use for fresh boxed product storage will likely be a problem D-I---Same as FSIS requirements J---includes gooseneck outlets along evisceration lines K--must have at trim stations in evisceration, and a few in the cutting or boning rooms L---as stated M thru Q—not applicable R---as stated Section III,IV---as stated and the information should be available Section VIII---1--NA 2-only these four compounds may be used. Chlorine as commonly used in chillers is not permitted Section IX---as stated Section X---as stated, see link to table 2. The compounds on page 1 “Additional Residue Testing Plan for the EU” must be handled by industry. The compounds on page 2 and 3 will be handled by FSIS Section XI,XII---as stated Section XIV---A 1,3—for application to shipping boxes only A 2,4---not applicable B—not applicable

The following will likely be of concern during the EU audit; 1) HACCP---be prepared to present and discuss the plan 2) SSOP----same as above 3) Items with sanitation emphasis a. Approved chemicals b. Pest control program c. Microbiological monitoring program for clean equipment d. Cleanable footwear e. Street cloths covered f. Proper floor drainage g. Commercial trucks h. Protective clothing not removed from plant i. Wood i.e. blast cells must be in good repair/clean j. Freezers clean and free of ice and frost k. Outside premises well drained and clean
