Coffee Cake Muffins
Ingredients: Topping: 1 ½ Tbsp. flour Step 1 1 ½ Tbsp. brown sugar *1/8 tsp.* cinnamon 1 Tbsp. butter
¾ c flour ¼ c sugar Step 2 ½ tsp and 1 pinch baking powder ¼ tsp. cinnamon 1 pinch ginger 1 pinch baking soda 1 pinch salt 2Tbsp. butter
1 beaten egg Step 3 ¼ c buttermilk
Yields 6 muffins Directions: Preheat oven to 400°. Line 6 muffin cups with paper. 1.) Make topping in a small bowl. Mix dry ingredients for topping. Cut in butter until the mixture is crumby. 2.) In a medium mixing bowl stir together flour, sugar, baking powder, cinnamon, ginger, baking soda, and salt. Cut in butter until mixture is crumby. Form a well in the center of the mixture. 3.) In another mixing bowl combine egg and buttermilk. Add this egg mixture into the flour mixture. Stir until moistened. It should look lumpy. 4.) Spoon the batter into the cups so that they are filled one-third of the way. Layer the topping on top of the batter. Add more batter to each cup. Finish each with the topping. 5.) Bake at 400° for 15-18 minutes or until golden brown. 6.) Use a wooden toothpick to check for doneness. 7.) Cool muffins on a wire rack for 5 minutes. Serve warm. ****NOTE***** 1/8 tsp = 1 pinch
