Title Demonstrate knowledge of milk production, collection and reception in a dairy processing operation

Purpose This theory-based unit standard is for people carrying out milk processing functions in a dairy processing operation.
People credited with this unit standard are able to demonstrate knowledge of: the characteristics of milk and milk byproducts; the parts of a milking plant and the conditions required for the safe harvesting and storage of milk in the farm dairy; the principles of milk collection and transportation from dairy farms; and pathogen controls relevant to milk tanker transport and reception of milk in a dairy processing operation.

Explanatory notes
1 Legislation Legislation relevant to this unit standard includes but is not limited to the Animal Products Act 1999, Health and Safety in Employment Act 1992, and Animal Products (Dairy) Regulations 2005.
2 Definition Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace. These include but are not limited to site-specific and company standard operating procedures (SOP), food safety, environmental, bio-security and quality management requirements.

Outcome 1
Demonstrate knowledge of the characteristics of milk and milk byproducts.
Range milk and milk byproducts may include but are not limited to – skim milk, cream, buttermilk, retenate, permeate; evidence is required of three milk or milk byproducts.

1.1 Characteristics of milk are explained in terms of uses and special handling procedures for non-standard milk types.
Range non-standard milk types may include but are not limited to – organic, colostrums, stole, kosher; evidence is required of three non-standard milk types.
1.2 Characteristics of milk and milk byproducts are explained in terms of typical composition and uses.
1.3 Characteristics of milk and milk byproducts are explained in terms of procedures for prevention of cross-contamination.
Outcome 2
Demonstrate knowledge of the parts of a milking plant and the conditions required for the safe harvesting and storage of milk in the farm dairy.
Evidence requirements
2.1 The main parts of a milking plant are identified and outlined in terms of their function for the safe harvesting of milk.
Range parts include but are not limited to – vacuum pump, interceptor, vacuum regulator, milk and air lines, pulsators, long and short milk and pulse tubes, cluster assembly, teat cups, milk receiver, milk pump, milk filter; function includes but is not limited to – milk cooling, milk storage.
2.2 Hygiene requirements for farm dairy operation are identified and outlined in terms of organisational requirements.
Range requirements include but are not limited to – milking practices, milking plant hygiene.
2.3 Factors affecting milk quality during storage on farm are identified and outlined in terms of the prevention of contamination and deterioration.
Outcome 3
Demonstrate knowledge of the principles of milk collection and transportation from dairy farms.
Evidence requirements
3.1 Procedures followed by the milk tanker driver are explained in terms of achieving accurate supplier crediting.
Range procedures include but are not limited to – pickup time and frequency, volume measurement, pumping, sampling, recording.

3.2 Quality checks carried out by the milk tanker driver prior to pumping milk from the farm milk tank are explained in terms of organisational requirements.
Range quality checks include but are not limited to – smell, appearance, foreign matter, temperature.
3.3 Milk quality tests carried out on supplier milk samples are explained in terms of their purpose and company standards.
Range tests include but are not limited to – micro-biological, contaminants.
3.4 General requirements for milk handling are explained in terms of factors affecting the quality of milk and product safety during collection and delivery to site.
Range requirements include but are not limited to – milk contact surfaces, pumping and agitation, personal hygiene, tanker inspection, hygiene checks.
Outcome 4
Demonstrate knowledge of pathogen controls relevant to milk tanker transport and reception of milk in a dairy processing operation.
Evidence requirements
4.1 Pathogen controls are explained in terms of potential effects of pathogenic contamination for dairy products.
Range effects include but are not limited to – food poisoning, poor publicity, potential loss of markets, product recall, traceback investigations.
4.2 Pathogen controls are explained in terms of the nature and purpose of site hygiene zones.
4.3 Pathogen controls are explained in terms of common external non-critical hygiene zone controls.
