VINTAGE NOTES For our 2017 Cabernet Sauvignon, we selected grapes from specific growing regions throughout the Columbia Valley to achieve complex layers of flavor in the . Over 60% of this Cabernet Sauvignon is sourced from premier within Horse Heaven Hills, which is known for having warmer temperatures than many other areas of the Columbia Valley. The resulting grapes offer approachable, smooth tannins and bold ripe flavors. COLUMBIA VALLEY AVA As ’s largest appellation, the Columbia Valley comprises more than 60 percent (17,000 acres) of the state's total vinifera grape plantings. Its volcanic, well- drained, sandy loam soils stress the vines to yield focused flavors in our grapes. In most parts of the Columbia Valley, there is an average of 16 hours of sunlight and only eight inches of rainfall. This combination lends itself to the creation of unique with elegant fruit flavors and a crisp acidity, delighting the palate and providing a vibrant complement to any food pairing. WINEMAKING After harvest, the grapes for our Cabernet Sauvignon FINISHED WINE were destemmed and cold soaked for one day to APPELLATION: Columbia Valley capture intense color. Fermentation occurred in CONTENT: 82% Cabernet, 11% , 5% stainless steel tanks for up to 11 days at a maximum , 2% temperature of 92°F. Throughout fermentation, we ALCOHOL LEVEL: 13.5% performed pump overs and rack and returns for optimal PH: 3.79 RESIDUAL SUGAR: 4.3 g/mL extraction of color and flavor. We aged this wine in both TITRATABLE ACIDITY: 5.5 g/mL French and American oak to create well-integrated flavors and a rich mouthfeel.
