Brook & Bull Cellars is a return to Ashley Trout’s roots of varietally driven, nuanced, and intricately balanced . Sourcing from top sites, Trout creates wines that reflect her palate and can be appreciated now or aged over the next decade. Our wines are hand-crafted from vine to bottle, made with small lots sourced from carefully tended . Alcohol to acid, phenolics to tannin, balance is always our goal. Our reds age nicely through year eight, while whites and roses trend closer to the three to four-year mark.

Brook trout, much like winemaker Ashley Trout, are native to the east coast whereas bull trout, like our nation’s best wines, thrive in the Pacific Northwest. Forward pineapple and kiwi pop on the boquet, trailed by mineral notes of flint, slate, and granite. Granny smith apple and lemon spritz round out this incredibly aromatic Chardonnay. The slightest hint of toasty oak fattens the midpallet, while bright clean acid lingers on the finish.
