ADVENTURES IN GOOD FOOD When the rush of the season gets hectic, I t’s cold outside but you will be warmed to you can always rely on this classic recipe for the bone with this ganache paired with the roast chicken. It pairs beautifully with the L’Etoile Banyuls. Toso Brut. LUSCIOUS CHOCOLATE ROAST CHICKEN AND STUFFING GANACHE 1 Roaster Chicken, 4-5 lbs. INGREDIENTS: Butter 8 oz heavy whipping cream STUFFING: 8 oz Couverture or the best quality, 1/2 cup chopped onion semi sweet chocolate you can find. 1/4 cup butter DIRECTIONS: 1/2 tsp. dried leaf thyme, crumbled. Place cream in a saucepan over high heat and 2 Tbsp. chopped fresh parsley bring just to a boil, then remove the pan from 2 cups soft bread crumbs the heat.
