You should have 250 g (1 large breast) – Chicken Breast, Cubed roughly thirty by the time you finish. 宫 保 鸡 丁 ½ cup – Raw, Shelled Peanuts/Cashews 5. Take each of these pieces and roll them into a ball and flatten them slightly on the counter. ½ cup+– Green Onions, sliced into rounds 6. Flour your work surface and prepare to roll out the dough. 1 tbsp. – Ginger, Minced 1 tbsp. – Garlic, Minced 7. Roll the dough out using a small rolling pin. Try to get the skins thinner in the middle and thicker on 1 tbsp.+ – Peppercorns, whole the outside. This will allow the filling to cook quicker while maintaining a heavy seal. 3-4 chilies – Dried Red Chilies, cut into pieces 8. Fill each skin with 1 tsp of filling and fold the dough over the filling and crimp or crease the edges to seal in the filling. Repeat for the remaining dough/filling. 2 tsp. – White Sugar 1 Tbsp. – Chicken Powder 1/3 cup+ – Chicken Broth 1 tbsp. – Huang Jiu 9. Once you have completed the dumpling making process, choose a cooking method. 1 tbsp. – Potato starch 1 tbsp. – White vinegar a) Boiling – boil the dumplings in soup or water for 5-8 minutes and remove from the water. 1 tbsp. (For color) – Dark Soy Sauce Salt b) Steaming – Place the dumplings in a steamer basket with at least 1/2 an inch away on each side. 1-2 tbsp. – Vegetable oil for frying Steam for 7-10 minutes Directions c) Pan-Frying – pace a small amount of oil in the pan and heat on medium carefully place the dump- 1. Fry for 2-3 minutes or until peanut skin has begun to darken slightly. Basic Chili Recipe 5. Drain the peanuts in a colander set over a metal bowl. 辣酱秘方 6. Add remaining (2 tbsp.) of oil into wok and add the Sichuan peppercorn and dried red chilies to the wok. Fry briefly, less than 1 minute. 7. Add chicken, green onions, ginger, and garlic and stir-fry until chicken has browned lightly and veg- etables have wilted, about 2 minutes. 8. Add the chicken broth, vinegar, chicken powder, salt and sugar to the pan, and cook until liquid has reduced and thickened.

9. After liquid has reduced, add the peanuts back to the pan, along with the dark soy sauce and mix Food together thoroughly.

Food 10. Kill the heat and serve over rice or on a platter with other dishes. Spicy Shredded Potatoes In preparation for this year’s xianease Chili Cook-off, 酸辣土豆丝 here’s a primer one how to put together some chili, and beans or no beans, it will fill you up and keep you warm Ingredients as the mercury drops. 2 – Large Potatoes 3-4 – Dried Red Chilies Ingredients 1+ tsp. – Salt 2 tbsp. – White Vinegar 250 g – Kidney beans canned or rehydrated and 2 – large cloves garlic cooked 1/2 – Red or Green Bell Pepper, julienned (Optional) 1/2 – large yellow onion 1 tbsp. – olive oil 2-3 – cloves of garlic, minced fine Directions 250 g – lean ground beef 1. Peel and slice the potatoes lengthwise into pieces like large potato chip(crisps), as thin as possible, 3-4 – large tomatoes, diced 1-2mm thick. 1/2 – green bell pepper, diced 2. Stack the slices on top of each other and slice lengthwise again, again as thin as possible, creating thin tbsp – red chili powder strips of potato. (If they’re not perfect it’s ok, but try to get them as even as possible for even cooking. 2 2 tbsp – oregano 3. Place the strips in a strainer and rinse them lightly with water. 1 tbsp – ground black pepper 4. Peel and slice the garlic. 1 tbsp – ground cumin 5. Put the oil in a wok or large frying pan over medium-high to high heat 3 tbsp – tomato paste 6. Add the chilies and the garlic, and cook until garlic begins to brown, 1-2min. water 7. Add the potatoes and bell pepper and toss in the oil. (be careful! the water in the potatoes will pop when it hits the oil) Directions 8. Add the salt and cook for several minutes, continuously turning the potatoes for even cooking. If 1.
