OCTAVE MAURY, Réserve, Gaillac, Rouge AOC Gaillac, Sud-Ouest, France

The "Réserve" have been conceived as a collection of the great wines of the South-West, in order to present the beautiful expressions of our appellations. This Gaillac is the result of a selection of the best "old vines" of the estate, sublimated by maturing in French oak barrels for 12 months. Over the years, its taste qualities will develop: more fat and substance, as well as slightly vanilla fruit aromas, supported by melted and smoky tannins.

TERROIR Stony or sandy gravel depending on the plot.

VINIFICATION Destemming, separate varieties, traditional vatting (maceration 21 days). Fermentation temperature control. Racking and assembly.

AGEING Aging in oak barrels for one year, then bottling and ageing for 3 to 6 years until marketing.

VARIETALS Servadou 40%, Merlot 30%, Syrah 20%, Duras 10%

SERVING To be enjoyed at room temperature (17-18°C)

AGEING POTENTIAL 5 to 10 years

TASTING NOTES Garnet colour, slightly evolved, brilliant and watery. Intense, harmonious nose with notes of ripe red fruits almost jammed (redcurrant, blackberry, raspberry) and slightly toasted. These aromas are found on the palate in a very full, fleshy ensemble, supported by rich tannins that will ensure its longevity.

FOOD AND WINE PAIRINGS This wine of character will go well with meat in sauces, game and cheeses.
