PHANTOMWINE.COM Drunken Red Wine Pasta with Sausage and Olives This dish is fun for so many reasons…and why we haven’t tried it before, we don’t know!! As with any pasta dish, once you have the method down, you can add or omit ingredients as you like. Just make sure you save some wine for your glass! (Makes 2 servings….) Ingredients:  1 bottle dry red wine  ½ lb dry spaghetti  4 oz spicy Italian sausage  1/2 cup kalamata olives, pitted and halved  3 cloves garlic, minced  1/2 tsp fresh oregano, chopped  1 T. fresh parsley, chopped  1/4 cup toasted pine nuts  1 T unsalted butter  Parmesan cheese, freshly grated  Salt and fresh ground pepper

Preparation:  In a large pot, add the bottle of wine (minus ½ cup) and 2 quarts of water. Bring to a boil.  Meanwhile, pre-heat a large sauté pan over medium heat for one minute. Add 1 tsp of olive oil to the pan along with the sausage. Break up into small pieces and cook until browned. Remove from pan, but leave the fat and drippings.  To the same pan, add the minced garlic, oregano and parsley. Cook for 2-3 minutes, stirring often, until the garlic is golden brown. Add the remaining ½ cup wine, season with salt and pepper, and simmer for 5 minutes before removing from the heat.  When the wine boils, add a tablespoon of salt then add the pasta. Cook the spaghetti, stirring often, until al dente (about 1 minute less than the box directions). Reserve 1 cup of the cooking liquid, then strain the noodles well.  Place the noodles in the sauté pan with the garlic and herbs over medium heat. Add the butter and continually stir. Once all the liquid in the pan has been absorbed, add a few tablespoons at a time, stirring and cooking the pasta until your liking.  When the noodles are cooked to your liking, remove from the heat and add the sausage, olives and pine nuts. Mix well.  To serve, garnish with fresh parsley and copious grated Parmesan!

Serve up in large bowls, throw a piece of bread on top, then turn on the game and cheer on our Sacramento Kings with dinner and a glass of Proud Roots!

Bavette Steak with Chimichurri Sauce Bavette is a delicious cut of beef that, when marinated and seasoned correctly, has amazingly tender flavor and texture. And chimichurri…soooo delicious! (Serves 2…) Ingredients:

2 - 9oz bavette steaks (flank steak can also be substituted)

Marinade Chimichurri Sauce 1 T. canola oil ¼ cup fresh parsley, roughly chopped 2 T. soy sauce 3 T. red wine vinegar 2 T. olive oil 4 large garlic cloves, minced 3 garlic cloves 2 T. fresh oregano ½ T. fresh ginger, grated 2 tsp. crushed red pepper flakes Juice of 1 lemon ½ cup EVOO 1 T. balsamic vinegar Salt and freshly ground pepper 1 T. honey 1 rosemary sprig

Preparation:

 Mix all marinade ingredients together in a bowl and pour over the steaks in a shallow glass dish. Coat the meat completely. Cover and refrigerate overnight.  When ready to cook, scrape the marinade off the steaks and carefully pat dry with a paper towel. Rub each steak with a few drops of the canola oil.  Heat a grill pan or grill to very high heat. Cook on each side for about 3-4 minutes for medium rare, more if you prefer it more well done. Set aside to rest.

 To make the chimichurri, combine the parsley, vinegar, garlic, oregano and pepper flakes in a food processor and process until smooth. Season with salt and pepper. Transfer the mixture to a bowl and pour the olive oil over the mixture. Let stand for at least 20 minutes. Refrigerate if made ahead, but bring to room temp to serve!

Pair with a fresh salad of greens and late summer herbs, and the season’s last tomatoes. Slice the steak on the bias and top with the chimichurri sauce.

Finish with a glass of Phantom Red…a deliciously haunting dinner!
