ori Shubert came to Key West three years ago to open Two Scoops. “In a period of three weeks I L sold everything, closed my business and moved to Key West.” She knew she had a job, but her passion was Cupcake Sushi. It all started in her successful bakery/café in Fairhaven, Massachusetts. “The cakes really took off; people were driving an hour to pick up my cakes,” She said with a smile. “It was the senior ladies who complained about the large size of the cupcakes and were the impetus for Lori’s dream. “They would always split them and I thought there must be a way to make smaller, moister, more evenly frosted cupcakes.” She also never liked how dry the paper made the outside of the cakes. Lori sat on the floor of her kitchen one night trying to roll cake in frosting. She bought a bamboo sushi roller and with tremendous trial and error (and a cold stone, like they use in mixing ice cream), Cupcake Sushi was born. After placing her new invention, with chopsticks, in the display case at the bakery, the demand for Cupcake Sushi began. She developed a cart with a cold stone. “It weighs 500 pounds but people can’t get enough of watching us make it,” said Lori. You may have seen her at Goombay, Mallory Square, or the Artisan Market, where they are always a hit. Cupcake Sushi is beautiful to look at and is a testament to Lori’s art background. It’s hard to believe it’s even better to eat! Each bite includes all the flavor profiles: buttercream, moist cake, ganache, caramel, Featured Business nuts, and a delicate chocolate shell.
